Paleo Saucy Salmon/Tilapia

Preheat Oven to 350 degrees
- 1 Tbs Olive Oil
- 6 Cloves Garlic
- 1 (14oz) Can Fired Roasted Tomatoes
- 1 (14oz) Can Low Sodium Tomatoe Sauce
- 1 Chili Pepper
- 1-1 1/2 Tsp Ground Cumin
- 1 Tsp Ground Coriander
- 1/2 Tsp S & P Each
- 4 Skinless Tilapia/Salmon Fillets
Paleo Picanha (Steak)

Pan Sear then oven! YUM
- 1 to 2 lbs. grass-fed top cap sirloin, aka coulotte. (At whole foods it was called picanha)
- 3 Tbsp olive oil
- coconut oil
- 1 Tbsp kosher salt (or celtic sea salt)
- Pepper as much as you like, we are heavy hitters with pepper
- 4 cloves of garlic, chopped (we use crushed garlic in a jar from trader joes, took out the work of smashing it ;)
Baked Paleo Encrusted Chicken

- 1/2 - 1 Cup of Almond Meal
- 2 Tsp Salt
- 3/4 Tbs Ground Cayenne Pepper
- 1-2 Tsp Ground Mustard
- 2 Eggs
- 4 Boneless Skinless Chicken Breasts
- Play with spices. last time i added curry powder and it rocked also cumin as well is excellent

- 4 Mahi Mahi Fillets
- 1-2 tablespoons oil
- 1-2 tablespoons butter
- salt and pepper (I prefer white pepper with fish)
- 1/2 cup white wine or stock i had stock.
- 3 cloves garlic, crushed finely minced
- juice of 3-4 lemons, between 1/3 and 1/2 cup
- 2 tablespoons butter
Paleo Brussel Sprouts W/Bacon

Brown bacon in a medium skillet over medium high heat
- Package of bacon, chopped or not
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 shallot, chopped
- 1 1/2 pounds Brussels sprouts, trimmed, small spouts left whole, larger spouts halved
- Salt and pepper, to your taste
- 1 cup chicken broth
Paleo Salmon steaks in Curry Sauce

- 2 filets of salmon steaks
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp cayenne pepper
- 1 cup chicken stock(salt free)
- 4 tsp white wine

Saute onion and garlic in olive oil until tender
- 1 onion
- 4 cloves garlic, minced
- 4 tbs olive oil
- 2 peppers seeded and cut into strips
- 1 lb sliced zucchini
- 1 lb diced eggplant
- 4 tomatoes, skinned and wedged
- 3 tbs fresh parsley chopped
- 1/2 tsp oregano
- pepper to taste

Make Mojo- Put garlic and onion in a food processor with cumin, lemon zest and juice
- 12-14 Cloves Garlic, Cracked From Skin
- 1/2 Onion, Peeled And Coarsely Chopped
- 2 Tsp Ground Cumin
- 1 Lemon Zested And Juiced
- 1 Cup EVOO
- 1/4 Cup Water
- 1 1/2-2 Lbs Lean Ground Beef, Turkey or Veggie Meat
- 1 Tbs Paprika
- 2-4 Tbs Worcestershire Sauce
- 2 Tbs Hot Pepper Sauce
- 1 Cup Tomato Sauce
- 1 (14OZ) Can Fire Roasted Tomatoes
- 1 1/2-2 Palm Full Of McCormick Montreal Steak Seasoning
Paleo Chicken Tacos

Good for you and great tasting Paleo friendly Chicken Tacos!
- 6 dried guajillo chiles
- 1/4 cup apple cider vinegar
- 2 heads of Boston Bibb lettuce
- Chicken broth or water (enough to cover chicken below)
- 1 1/2 pounds chicken breast or tenders.
- 3 tablespoons olive oil, sunflower oil, or lard
- 5 garlic cloves, peeled and crushed
- 1 Large onion, peeled and quartered
- 4 tomatoes, cored and quartered
- 2 teaspoons ground cumin seed
- Sea salt, to taste
- Freshly ground black pepper
- 2 cups grape tomatoes, quartered
- 1 Large avocado, seeded, peeled, and cubed
- Hot sauce, to taste
- Lime wedges for serving
