Paleo Chicken A La Kim

Chicken and tomatoe sauce
- 1/2 green pepper
- 1 small white or yellow onion
- 1 tbs olive oil
- pkg skinless boneless thighs or breasts
- 1 small can 8 0z tomato sauce
- oregano
- S&P
- 5 cloves of garlic
Quinoa
By mack
Heat oil in a large nonstick skillet over medium-high heat
- 1 Tbsp olive oil
- 1 large uncooked onion(s), minced
- 1 clove(s) (medium) garlic clove(s), minced
- 1 cup(s) uncooked quinoa, rinsed (or purchase pre-rinsed quinoa)*
- 2 cup(s) reduced-sodium chicken broth
- 1/8 tsp black pepper
- 1/8 tsp crushed red pepper flakes, optional
- 4 cup(s) fresh spinach, baby leaves, packed, coarsely chopped
- 1/2 tsp table salt
Paleo Turkey Meatloaf

Heat oil in large nonstick skillet over medium heat
- 1 tablespoon oil
- 1 cup chopped onion
- 4 cloves of garlic garlic
- 1/2 cup fresh bread crumbs (onion, shroom and garlic mixture)
- 1 egg
- 1/8 cup chx broth
- 1/8 tsp tomato paste
- 1 1/2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cumin
- Freshly-ground black pepper to taste
- 1 pound ground turkey breast meat
- 1 can of fire roasted tomatoes
- 2 tbs of tomato paste
Paleo Fra Diavolo Sauce (WITH/WITHOUT SHRIMP)

We made it with shrimp
- 2 tablespoons canola oil
- 3 very ripe large beefsteak tomatoes, halved, seeded and coarsely chopped (couldn't find we used ripe tomatoes)
- 3 cloves garlic, smashed
- 2 shallots, thinly sliced
- 1/4 to 1/3 cup olive oil
- 3 tablespoons chopped fresh flat-leaf parsley, plus leaves for garnish (Used 1 TBS of dried)
- 2 tablespoons red wine vinegar not paleo
- 2 teaspoons honey not paleo
- 2 teaspoons chopped fresh oregano USed less than a tsp of dried oregano. ( 3 tsp of fresh is 1 tsp of dried)
- 1/4 teaspoon red chile flakes (or more if you prefer it really spicy) we used 3/4 tsp
- Salt and freshly ground black pepper
Balsamic Vinegar

Combine all in blender and blend until smooth
- 1/3 cup balsamic vinegar
- 2/3 small onion, chopped
- 2 teaspoons soy sauce or ponzu
- 2 tablespoons honey
- 2 teaspoons white sugar
- 2 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup and 3 tablespoons extra-virgin olive oil
Paleo Sweet Potato and Sausage Frittata

1. In a large oven proof skillet, heat the coconut oil over medium heat
- 1 pound sausage (we used anduille)
- 1 medium sweet potato, peeled and grated
- 10 eggs
- 1/2 bag baby spinach
- 3 tablespoons coconut oil
- Pepper to taste
Paleo Broccoli Soup

Fry onion in a large pan with oil on medium heat until slightly browned
- 1 onion, diced
- 1 tbs oil
- 3 cups broccoli
- 3 cups chicken or vegetable stock
- 1/4 cup pine-nuts
Paleo Chicken Tikka

Place chicken in non metal bowl, & sprinkle with lemon juice
- Marinade:
- 4-6 skinless, boneless breasts cut into 1 inch cubes
- 4 tablespoons lemon or lime juice
- evoo for brushing
- 8 wooden skewers (soaked in water)
- 1 cup coconut milk
- 4 cloves garlic, crushed
- 2 inches of fresh ginger, grated
- 1 tbs ground cumin
- 1 tbs chili powder
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1 teaspoon cardamom
Paleo Chicken, Pumpkin and Indian Spices

Fry onion and garlic in a large pan with oil on medium heat for 2minutes
- 2 chicken breasts, sliced
- 5 cups pumpkin, diced
- 2 tbs olive oil
- 1 onion, diced
- 2 garlic cloves, finely chopped
- 2 tbs ground ginger
- 1 tbs ground turmeric
- 2 tbs ground coriander
- 2 tbs ground cumin
- 1 1/2 cups vegetable stock
- 1 bunch fresh coriander, chopped
- If your'e not doing paleo add some Salt
Paleo Sun Dried Tomato Chicken Bake

Preheat oven to 375. Place the chicken breasts in a large glass baking dish
- 2 lbs boneless skinless chicken breasts cut in half (I used the organic free range chicken breast tenders from Trader Joe’s)
- 8.5oz jar of julliane cut sun dried tomatoes
- 8 garlic cloves, sliced thin
- 2 tablespoons dried basil
- Sea salt and black pepper to taste
