1. Stir all Orange-Jalapeno ingredients in med saucepan; bring to a boil over med high heat
- 10 skinned chicken thighs (~3 lbs)
- 1/2 t salt
- 1/2 t pepper
- Orange-Jalapeno Glaze
- 2 c orange juice
- 3 med jalapeno peppers, seeded and finely chopped
- 4 garlic cloves, minced
- 3 T grated orange rind
- 1 T olive oil
- 3 T maple syrup
- 1 t salt
- 1/2 t ground ginger
- 1/2 t pepper

- 8 T panko bread crumbs

- 1/2 cup red cabbage, thinly sliced
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup fresh lime juice
