- 1/4 cup(s) Neufchatel cheese

- 1/2 cup(s) fat-free skim milk
- 1 tsp all-purpose flour, for rolling out dough
- 1/3 cup(s) sugar, colored (for decorating)
Oven Baked Zucchini Fries

Preheat oven to 475°F. Coat a large baking sheet with cooking spray

- Olive oil cooking spray
- 2/3 cup whole-wheat flour
- 1/3 cup all-purpose flour
- 3 tablespoons cornmeal
- 1 teaspoon salt
- 1 1/2 pounds zucchini, (about 3 medium), cut into 1/2-by-3-inch sticks
- 2 egg whites
- Blue cheese, marinara, or hot sauce (for dipping)
Coconut Flour Pancakes

Beat well all the wet ingredients
- 4 eggs
- 1 t vanilla
- dash of cinnamon and nutmeg
- 3 T. coconut flour
- 3 T melted butter (you can use coconut oil, but the pancakes will taste a little more coconutty)
- 1/4 t sea salt
- 2 T coconut milk or heavy cream
Spicy Black Bean and Zucchini

- 1 Medium Zucchini, chopped.
- 1 thick slice of onion, chopped.
- 1 can of black beans, drained and rinsed.
- 2 TBSP Salsa
- Salt and Pepper to taste.
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp curry powder OR smoked paprika
