Poppy Seed Fruit Salad

Almonds add a nice crunch to this pretty salad that's always a hit when I sere it
- 1/4 cup honey
- 4 tablespoons limeade concentrate
- 2 teaspoons poppy seeds
- 1 cup halved fresh strawberries
- 1 cup cubed fresh pineapple
- 1 cup fresh blueberries
- 1 cup cubed seedless watermelon
- 1/4 cup slivered almonds, toasted
Chocolate Chip Orange Zucchini Muffins

DIRECTIONS Sift together flour, baking powder, soda, salt, and spices
- 3 eggs
- 2 cups white sugar
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts
- 1 cup semisweet chocolate chips
- 1 tablespoon orange zest
- 3 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Pumpkin Pie Cake (paleo)

Preheat oven to 350 degrees
- Optional:
- 1 c. almond butter
- 2 eggs
- 3/4 c. canned pumpkin
- 1/4 c. honey
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1/4 tsp. ground ginger
- 1/2 bar of Ghirardelli 70% cacao chocolate chopped 1/2 c. chopped nuts
Broccoli Salad

Place bacon in a large, deep skillet
- 5 slices bacon
- 1 head fresh broccoli, cut into bite size pieces
- 1/4 cup red onion, chopped
- 1/2 cup raisins
- 1 1/2 tablespoons white wine vinegar
- 1 tablespoons white sugar
- 1/2 cup mayonnaise
- 1/2 cup sunflower seeds
Borscht

Crumble the sausage into a skillet over medium-high heat
- 1 (16 ounce) package pork sausage
- 3 medium beets, peeled and shredded
- 3 carrots, peeled and shredded
- 3 medium baking potatoes, peeled and cubed
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1 (6 ounce) can tomato paste
- 3/4 cup water
- 1/2 medium head cabbage, cored and shredded
- 1 (8 ounce) can diced tomatoes, drained
- 3 cloves garlic, minced
- salt and pepper to taste
- 1 teaspoon white sugar, or to taste
- 1/2 cup sour cream, for topping
- 1 tablespoon chopped fresh parsley for garnish
Scallop and Fennel Rotini

1. Trim base from fennel bulb; remove and discard stalks at the point where they branch from the bulb
- 1 pound bay scallops
- 1 fennel bulb
- 3/4 pound dried rotini
- 1 tablespoon olive oil
- 1 clove garlic, finely chopped
- 1 tablespoon Pernod, or other anise-flavored liqueur
- 1 tablespoon fresh lemon juice
- 2 teaspoons lemon zest
- salt & freshly ground black pepper to taste

Preheat oven to 400 degrees F (200 degrees C)
- 1 bunch fresh asparagus, trimmed
- cooking spray
- salt and pepper to taste
- 2 tablespoons butter
- 1 tablespoon soy sauce
- 1 teaspoon balsamic vinegar

- 16 oz salsa
- 1 lb boneless uncooked skinless chicken breast
- 15 oz can corn
- 15 oz can black beans

- 1 lb cooked pasta
- 2/3 cup oil
- 1 cup cider vinegar
- 1 1/2 cup sugar
- 2 teaspoon mustard
- 3/4 teaspoon minced garlic
- 1 small onion, chopped
- 2-3 thinly sliced cucumber
- 1 bell pepper, diced
