- Ingredients ◦2 Kohl rabi (approx 330 grams)
- ◦2 Small carrots (approx 100g)
- ◦1/2 Large onion, diced
- ◦1/2 tsp minced ginger
- ◦1/2 tsp sugar
- ◦1-2 cloves garlic
- ◦3 tbsp vinegar (white wine or cider)
- ◦2 tbsp good quality soy sauce
- ◦1 tsp sesame oil
- ◦Salt and pepper to taste

- 4 lb. rolled or rump roast
- 1 pkg. dry onion soup mix
- 3 beef bouillon cubes
- 2 c. boiling water

Portuguese Kale and Potato Soup

Heat oil in a deep pot over medium high heat
- 2 tablespoons (2 turns around the pan) extra-virgin olive oil
- 3 medium white waxy potatoes, like yukon golds, peeled and diced
- 2 medium onions, chopped
- 4 to 6 cloves garlic, chopped
- 2 bay leaves, fresh or dried
- 1 pound kale, coarsely chopped
- Coarse salt and pepper
- 1 (15-ounce) can garbanzos (chick peas), drained and rinsed
- 1 can diced tomatoes
- 1 pound diced chourico, casing removed
- 1 quart chicken broth
- Warm, crusty bread
Greek Salad

Make dressing in bowl. Add vegetables
- Dressing:
- 2 cucumbers, chopped
- 3-4 tomatoes, chopped
- 1 onion, thinly sliced
- 6 oz fat free feta cheese
- 1/2 cup olives
- 1/4 cup olive oil
- 2 tsp balsamic vinegar
- 1/4 tsp salt
- 1/2 tsp oregano
- pepper to taste

To prepare soup, heat 1 1/2 teaspoons oil in a large saucepan over medium heat
- Soup:
- 1 1/2 teaspoons extra-virgin olive oil
- 4 garlic cloves, crushed
- 1 1/2 ounces Spanish serrano ham or prosciutto, diced
- 1 teaspoon Spanish smoked paprika or sweet paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon crumbled saffron threads
- 3 (15.75-ounce) cans fat-free, less-sodium chicken broth
- Croutons:
- 1 1/2 teaspoons extra-virgin olive oil
- 1 garlic clove, crushed
- 3 cups (1-inch) cubed hearty country bread (about 4 3/4 ounces)
- 1/2 teaspoon Spanish smoked paprika or sweet paprika
- Remaining ingredient:
- 4 large eggs

- 1 medium sized eggplant
- 1/2 cup parmesan cheese
- 1/2 cup Paleo flour (almond flour, flaxseed flour, etc…)

In a slow cooker, combine the asparagus, crabmeat, fish sauce, spinach, tofu, oregano and garlic
- 1 (10 ounce) can asparagus tips, drained 2 (6 ounce) cans crabmeat, drained and flaked
- 2 tablespoons fish sauce
- 1 tablespoon oyster sauce
- 1 cup chopped fresh spinach
- 1 cup diced firm tofu
- 2 teaspoons dried oregano
- 1 clove garlic, crushed
- 2 tablespoons cornstarch
- 1/2 cup broth
- 2 eggs, lightly beaten
Vegetarian Stuffed Peppers (Crockpot)

Cut tops off peppers and remove seeds; set aside
- 6 large sweet peppers
- 2 cups cooked brown rice
- 3 small tomatoes, chopped
- 1 cup frozen corn, thawed
- 1 small sweet onion, chopped
- 1/3 cup canned red beans, rinsed and drained
- 1/3 cup canned black beans, rinsed and drained
- 3/4 cup cubed Monterey Jack cheese
- 1 can (4-1/4 ounces) chopped ripe olives
- 4 fresh basil leaves, thinly sliced
- 3 garlic cloves, minced
