Medium Zucchini, chopped.
thick slice of onion, chopped.
can of black beans, drained and rinsed.
Salt and Pepper to taste.
tsp chili powder
tsp curry powder OR smoked paprika
Spray a skillet with no-stick spray. Sautee the onions on med-high heat until they start to lose their water. Add the zucchini and cook for a few minutes more. Add the beans and salsa. Sprinkle with the spices. Heat until warmed throughout.
