Roasted Root Vegatables with Apple Syrup

Boil apple juice and wine in a large saucepan until reduced to 3/4 cup, about 30 minutes
- 3 tablespoons butter
- 3 cups apple juice
- 1 cup dry white wine
- 1 1/4 pounds turnips
- 1 1/4 pounds parsnips
- 1 1/4 pounds carrots
- 1 1/4 pounds sweet potatoes
- 1 1/4 pounds rutabagas
- salt and pepper to taste
Yummy Cube Steak

In a large resealable plastic bag, place the cube steak, flour, salt, and pepper
- 2 pounds beef cube steak
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 (14.5 ounce) can canned diced tomatoes
- 1 (15 ounce) can canned tomato sauce
- 1 large onion, thinly sliced
- 1 teaspoon Italian seasoning
- 5 small zucchini, cut into 1/2 inch slices

Preheat oven to 350 degrees F (180 degrees C)
- 4 cups rolled oats
- 1 cup packed brown sugar
- 1 cup butter
- 1/2 cup white corn syrup
- 1 cup semisweet chocolate chips
- 3/4 cup peanut butter
Apple Crisp

Mix all ingredients together
- Crisp Topping:
- 4 Gala or Granny Smith Apples, peeled and small diced (1/4"x1")
- 1 T. Arrowroot Powder
- 1 tsp. Ground Cinnamon
- 1/2 tsp. Ground Nutmeg (I always buy whole nutmeg and grate, when needed)
- 1/4 tsp. Ground Ginger
- 1/4 tsp. Cayenne Pepper
- Dash of Sea Salt
- 2 T. Coconut Oil, melted
- 1/2 C. Almond Flour (I used the raw almond meal...no need to use blanched here)
- 1/4 C. Ground Flax Seed
- Handful of Walnut, ground
- 1/4 C. SlicedAlmonds
- 1/4 C. Dried, Shredded, Unsweetened Coconut
- 1 T. Pure Maple Syrup
- 1 tsp. Ground Cinnamon
- Dash of Sea Salt

- Optional:
- 1 c. almond butter
- 2 eggs
- 3/4 c. canned pumpkin
- 1/4 c. honey
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1/4 tsp. ground ginger
- 1/2 bar of Ghirardelli 70% cacao chocolate chopped 1/2 c. chopped nuts
Curry Turkey Salad

Method 1 In a small skillet, heat the curry powder on medium low heat until quite fragrant
- 2 cups chopped cooked turkey meat
- 1 apple, peeled, cored, chopped*
- 1 teaspoon of lemon juice*
- 1/4 cup of raisins and/or dried cranberries
- 2 Tbsp chopped green onion or chives
- 2 Tbsp chopped fresh cilantro (can substitute parsley)
- 1 rib celery chopped
- 1/2 Tbsp yellow curry powder
- 1/4 cup yogurt
- 1/4 cup mayonnaise
- 1 Tbsp honey
- 1/4 teaspoon ground ginger
- Salt and pepper
- *Once you've chopped the apples, sprinkle with lemon juice to keep them from discoloring.
