Chocolate Coconut Blobs

Mash avocado. Add remaining ingredients
- 1 avocado
- 4 tablespoons of carob powder (this makes it a beautiful rich carob flavour. If you’re not a huge fan of carob just use less or substitute with cacao powder)
- 1 teaspoon of almond extract
- Stevia to taste (add enough stevia so that the mixture is a little sweeter than you like. Once you add the coconut and freeze the blobs they won’t be quite as sweet)
- 2/3 cup of coconut chips/flakes
Suzanne Somers Dover Sole

Season both sides of the fish with salt and pepper
- 4 pieces Petrale sole
- Salt and freshly ground pepper
- 3 tablespoons olive oil
- Juice from 1 lemon
- 3 tablespoons butter
- 1 tablespoon capers (optional)
- Lemon wedges for garnish
Fried Zucchini

Place zucchini and onions in a medium bowl and mix together
- 2 zucchini, quartered and sliced
- 1 onion, sliced into rings
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1 cup vegetable oil for frying
Slow Cooker Potato Leek Soup

Place the potatoes, leeks, onion, margarine, chicken bouillon, salt, and pepper in a slow cooker
- 8 potatoes, chopped
- 3 leeks, white and light green parts only, cut into 1/4-inch rounds
- 1 onion, diced
- 3 tablespoons margarine
- 2 chicken bouillon cubes
- 1 tablespoon salt
- 1/2 teaspoon ground black pepper
- 1 (12 ounce) can evaporated milk
Simple Swiss Chard

Heat the olive oil on a large skillet over medium heat
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, minced
- 1 bunch Swiss chard, stalks discarded, leaves cut into wide ribbons
- 1/4 cup balsamic vinegar
- salt and pepper to taste
Halibut Weaver

Preheat oven to 350 degrees F (175 degrees C)
- 2 pounds halibut
- 1 cup mayonnaise
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon dried dill weed
- 1 teaspoon mustard powder
Pork Chops and Scalloped Potatoes

Preheat the oven to 350 degrees F (175 degrees C)
- 6 (1/2 inch thick) boneless pork chops
- 6 medium red potatoes, thinly sliced
- 1 medium onion, thinly sliced
- 2 teaspoons dried thyme
- 1 teaspoon pepper
- 1/4 cup butter
- 1 teaspoon beef bouillon
- 1 cup hot water
- 1/4 cup all-purpose flour
- 1/4 cup water
Fresh Herbed Halibut

Preheat the oven's broiler and coat a baking sheet or broiling pan with olive oil
- 1 (2 pound) halibut fillet
- 1 teaspoon sea salt
- lemon pepper to taste
- 1 teaspoon garlic powder
- 1 tablespoon dill weed
Chicago Italian Beef Sandwich

Preheat the oven to 300�F (160�C)
- 1 5-lb rump roast
- 1 medium onion, diced
- 2 cups beef stock
- 1 Tbsp fresh oregano or 1 tsp dried oregano
- 1 tsp thyme
- 1 tsp dried marjoram
- 1 bay leaf
- 1 tsp hot pepper sauce, such as Tabasco
- 2 Tbsp Worcestershire sauce
- 3 to 6 garlic cloves, crushed
- 1 green pepper, seeded and chopped
- 1 Tbsp fresh basil (optional)
- Italian bread or rolls
