Mock Apple Pie (no apples)

NO APPLES needed! Don't be skeptical, this retro recipe really does taste like apple pie!! Cheap to make too!
- CRUMB TOPPING:
- 1 1/4 cups sugar
- 2 teaspoons cream of tartar
- 1 3/4 cups water
- 2 tablespoons fresh lemon juice (I used 1/2 teaspoon more)
- 2 1/2 cups roughly broken Ritz crackers (I used R.F.)
- 1 (9-inch) pastry pie crust, unbaked (I used frozen)
- 1 tablespoon salted butter
- 1/2 teaspoon apple pie spice, divided
- 1/2 cup all-purpose flour
- 1/3 cup light brown sugar, packed
- Pinch of salt
- 1/8 to 1/4 teaspoon apple pie spice
- 3 tablespoons unsalted butter, melted

- 1 medium onion, chopped (1/2-cup)
- 1 1/2 teaspoons garlic powder
- Salt and black pepper, to taste
- 1 (8-ounce) can tomato sauce (I use Hunt's)
- 1/2 cup chicken broth (I dissolved 1/2 teaspoon chicken bouillon granules in 1/2 cup boiling water)
- 1 1/2 cups cooked rice
- 1 cup cooked whole kernel corn
- 1 (8-ounce) package shredded cheddar cheese (2-cups), divided

- GARLIC BUTTER FOR THE BREAD:
- 1 (32-ounce) bag frozen meatballs (I used Great Value brand, Fully Cooked, Italian Style)
- 1 (24-ounce) can/jar marinara or spaghetti sauce
- 1 cup mozzarella cheese, shredded
- 1 cup Italian blend cheese, shredded
- 1/2 cup Parmesan cheese, shredded
- 1 loaf fresh French or Italian bread, sliced (I used French twin loaves from Walmart Deli)
- 1/2 stick (1/4-cup) salted butter, melted
- 1/4 to 1/2 teaspoon garlic powder, to taste
- 1/4 teaspoon dried Italian seasoning
- Dash of salt, optional
- 2 tablespoons Parmesan cheese, grated, optional
Apple Pie Enchiladas

Flour tortillas filled with apple pie filling are rolled up and baked in a brown cinnamon sugar syrup
- 1 (21 ounce) can apple pie filling (I used Great Value brand)
- 6 large size (8") flour tortillas (I use the refrigerated ones)
- 1/2 teaspoon ground cinnamon
- 2 tablespoons margarine
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar (I used dark brown)
- 1/2 cup water
- Vanilla ice cream or whipped cream/whipped topping for serving
Lemon Garlic Parmesan Orzo w/ Peas

- 1 cup uncooked orzo pasta
- 1 (14.5 oz) can chicken broth (I used reduced-sodium)
- 2 cups water
- 1/2 teaspoon salt
- 1/2 cup frozen sweet peas
- 1 tablespoon butter, divided
- 1 teaspoon olive oil
- 1 medium clove garlic, minced (1/2 tsp)
- Grated zest of 1 lemon (1 Tbl)
- 1 1/2 - 2 tablespoons fresh lemon juice (half a lemon)
- 1/2 cup whole milk
- 1/3 cup grated Parmesan cheese
- 1/4 teaspoon freshly cracked black pepper, or to taste
- Salt, to taste
