Traditional Frosting for Red Velvet Cake

In a small saucepan, whisk flour in 1/4 cup of the milk until smooth and lump free
- 3 tablespoons all-purpose flour
- 1 cup whole milk
- 2 sticks (1 c.) unsalted butter*, room temperature
- 1 cup granulated sugar
- 1/4 teaspoon salt (omit if using salted butter)
- Scant 1 teaspoon vanilla
Parmesan Corn Grits w/ Country Ham

Great for using up leftover holiday ham
- 1 1/3 cups yellow grits (regular or stone-ground. Can use white grits, but not instant)
- 1 teaspoon salt, or to taste
- 3/4 cup bite-size country ham pieces, lightly browned
- 1/3 cup whole milk
- 1 cup frozen whole kernel corn (I used canned Green Giant Niblets corn, drained)
- 2 tablespoons butter
- 3/4 cup grated or finely shredded Parmesan Cheese (I used green can kind)
- 1/2 teaspoon freshly cracked black pepper
Sweet and Sour Meatballs

Packaged (or homemade) meatballs are simmered in a sweet, spicy sauce and served over rice
- 1 (32 oz) package frozen pre-cooked meatballs (or your favorite homemade)
- 1 (20 oz) can pineapple chunks in heavy syrup, drained, syrup reserved
- 1 green pepper, coarsely chopped
- 1 cup brown sugar (I used light)
- 1/2 cup white vinegar
- 1 teaspoon soy sauce, or to taste (optional)
- 1/3 cup ketchup
- 1/2 teaspoon red pepper flakes (optional)
- 1 to 1 1/2 cups cold tap water
- 2 tablespoons cornstarch
Family Favorite Baked Beans

These homemade baked beans are the best ever!
- 5 (15 oz) cans Van Camp's pork and beans
- 7 - 8 slices bacon
- 1 medium yellow onion, chopped (about 1 1/4 c)
- 2/3 cup ketchup (I used Hunt's)
- 1/2 cup molasses (I used Grandma's)
- 1/2 cup packed dark brown sugar
- 1 teaspoon yellow mustard
- Salt and black pepper, to taste
Easy Pecan Fudge

Delicious fudge, and super easy! Just stir together and refrigerate
- 1 (12 oz) package milk chocolate chips (about 2 cups)
- 1 (15.5 - 16 oz) tub Milk Chocolate or Chocolate frosting (I used Betty Crocker Rich & Creamy)
- 1 cup chopped pecans or walnuts (I used pecans)

- 3/4 cup ketchup (I use Hunt's)
- 3/4 cup chili sauce (Heinz)
- 1 cup water
- 2 tablespoons apple cider vinegar
- 2 tablespoons packed brown sugar (I used dark)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1 tablespoon dijon mustard (I used Grey Poupon)
- 1/4 teaspoon black pepper, or to taste
- Cayenne pepper or crushed red peppers, to taste (optional)
- 2 teaspoons worcestershire sauce
- 2 tablespoons butter or margarine
- 1 medium onion, chopped (3/4 cup)
- 1 medium green bell pepper, chopped (2/3 cup)
- 2 lbs. lean ground beef (I used 93/7)
- Salt, to taste (optional)
- 8 hamburger buns (plus butter for toasting, if desired)

- GARLIC BUTTER TOPPING:
- 2 1/2 cups all-purpose baking mix (such as Bisquick)(I used Great Value brand)
- 1/2 stick (1/4-cup) cold salted butter
- 1 cup cheddar cheese, shredded (I hand shredded half an 8-ounce block of mild cheddar)
- 3/4 cup milk (I used 2%)
- 1/8 to 1/4 teaspoon garlic powder
- Pinch of cayenne pepper, optional
