ASIAN CHICKEN NOODLE SALAD

A fast and delicious summer salad on your table in minutes
- 1 package (3 ounces) ramen noodle soup mix
- 1 package (14 ounce) coleslaw blend (cabbage slaw mix)
- 2 cups shredded rotisserie chicken breast
- 4 green onions, diagonally sliced
- 1/3 cup peanuts
- 1/2 cup Kraft light Asian toasted sesame dressing
- 1 tablespoon creamy peanut butter
CHERRY RICOTTA CHEESECAKE

A lighter version of cheesecake by Elle Krueger of Food Network
- Cooking spray
- 1 16-ounce container of part-skim ricotta cheese
- 1/2 cup of reduced-fat sour cream
- 4 ounces of neufchatel cheese, or reduced fat cream cheese, softened
- 3 large eggs
- 3/4 cup of sugar
- 1/4 cup of all-purpose flour
- 1 teaspoon of vanilla extract
- 1 teaspoon of finely grated lemon zest
- 1/4 teaspoon of salt
- 2 cups fresh or frozen pitted sweet cherries
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1/2 teaspoon unflavored gelatin
- 1 tablespoon warm water
ITS EASY BEING GREEN SMOOTHIE

- 4 cups of your favorite leafy greens, such as kale, spinach, collard greens
- 2 tbsp hempseeds and/or flaxseeds
- 1 cup frozen blueberries
- 1/4 cup frozen cherries
- 1/4 cup frozen raspberries
- 1/4 cup frozen pineapple pieces
- 1/4 cup frozen mango chunks
- 1 medium frozen peeled banana, broken into pieces
- 2 cups unsweetened almond milk
LENTIL SOUP

A warm and hearty soup
- 2 tablespoons olive oil
- 2 tablespoons onion powder
- 1/2 cup finely chopped carrot
- 1/2 cup finely chopped celery
- 3 medium potatoes (cubed)
- 2 teaspoons kosher salt
- 1 pound lentils, picked and rinsed
- 1 cup peeled and chopped tomatoes
- 2 quarts chicken or vegetable broth
- 1/2 teaspoon freshly ground coriander
- 1/2 teaspoon freshly ground toasted cumin

- In a double boiler, melt:
- 35-40 large marshmallows
- 1 cup milk
- 1 small box of Dream Whip you need to make up or a 16 oz container of Cool Whip.
CHOCOLATE COVERED RAISIN OATMEAL COOKIES

- 1/2 cup Quaker Old Fashioned Oatmeal
- 2-1/4 cups all-purpose flour
- 1-1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 cup (2 sticks) butter, softened
- 3/4 cup firmly packed brown sugar
- 3/4 cup granulated sugar
- 2 teaspoons vanilla
- 1 teaspoon lemon juice
- 2 eggs
- 3 cups chocolate covered raisins
- 1-1/2 cups chopped pecans
BANANA COOKIES

1 Preheat the oven to 350°F
- 1/2 cup of unsalted butter, room temperature
- 1 cup of sugar
- 1 egg, room temperature
- 1 cup of mashed bananas (about 2 1/2 large bananas)
- 1 teaspoon of baking soda
- 2 cups of flour
- pinch of salt
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon of ground mace or nutmeg
- 1/2 teaspoon of ground cloves
- 1 cup of pecans (walnuts and chocolate chips are fine alternatives)
IRENE’S PUMPKIN PIE

- 2/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger

- 2 beaten eggs
