Great pie!
- CRUST:
- 2 cups flour
- 2/3 cup shortening (1/2 cup lard and remain butter)
- 1 teaspoon salt
- 1 small egg, slightly beaten
- 1 teaspoon vinegar
- 4 tablespoons cold water
- FILLING:
- 3 cups thinly sliced Granny Smith or McIntosh apples
- 1 cup sugar
- 3 tablespoons flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 teaspoons butter
- 1/4 teaspoon lemon juice
HOT CROSS SPICE BUNS FROM BREAD MACHINE

Prep time: 2 hours. Cook time: 2 hours 30 minutes
- 3/4 cup lukewarm water (110 F)
- 1 tablespoon nonfat dry milk powder
- 3 tablespoons unsalted butter, cut into small pieces
- 2 large eggs, separated, divided
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 3/8 teaspoon salt
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cloves (optional)
- 1-2 teaspoon lemon zest (optional)
- 1-2 teaspoon orange zest (optional)
- 3/4 cup dried currant or sultana or raisins
- 3 cups bread flour or all-purpose flour, approximately
- 1 tablespoon active dry yeast
- 2 tablespoons water
- 1/4-1/2 cup white icing, to decorate tops

Combine sugar, flour, oats, butter, cinnamon and mix well
- 1-1/2 cups brown sugar, packed
- 1 cup flour
- 1/2 cup quick oats
- 2/3 cup butter or margarine (1/2 of each is recommended)
- 2 teaspoon cinnamon
- 12 cups sliced McIntosh apples
- 2 tablespoons lemon juice
- 2 tablespoons water

- 1 1/2 pounds grouper or other white fish fillets

- 1 tablespoon fresh lime juice

- 1/4 cup sugar
- 1/4 cup melted butter
- 32 ounces 1/3-less-fat cream cheese
- 4 large eggs
- 2 cups refrigerated or canned eggnog, divided
- 2 cups powdered sugar
- 2 tablespoons all-purpose flour
- 1 cup whipping cream
- Garnish: freshly grated nutmeg

Wonderful soup we had on our tour through Tuscany, Italy in September, 2010
- 1 onions, finely chopped
- 1 leek
- 1 10 ounce can cannellini (white beans)
- 2 quarts chicken broth
- 1 head black leaf kale, sliced and chopped
- 2 celery stalks, sliced
- 1/2 cup parsley leaves, chopped
- 2 carrots, sliced
- 2 zucchini, sliced
- 1 small bunch of basil, leaves torn
- 2 tablespoons tomato paste
- 1/2 tsp oregano
- freshly ground, black pepper
- 1 tsp sea salt
- 1/2 cup extra-virgin olive oil
- 1/2 pound stale Italian bread
- freshly grated Parmesan cheese
CHEWY CHOCOLATE COOKIES

We can't resist big, soft, fudgy cookies, like those found in glass jars on bake-shop counters
- Tip:
- 3/4 3/4 3/4 cup all-purpose flour
- 3/4 3/4 3/4 cup whole-wheat pastry flour
- 3 3 3 tablespoons unsweetened cocoa powder
- 1/2 1/2 1/2 teaspoon baking soda
- 1/2 1/2 1/2 teaspoon salt
- 6 6 6 large egg whites
- 3/4 3/4 3/4 cup granulated sugar
- 1 1/2 1 1/2 1/2 cups packed dark brown sugar
- 1 1 1 tablespoon vanilla extract
- 3 3 3 ounces unsweetened chocolate, chopped and melted (see Tip)
- 5 melted. Cool for 5 minutes at room temperature.
- 2/3 1/2 2/3 cup raisins, dried cherries or dried blueberries into the Chewy Chocolate Cookies batter along with the flour mixture. Or use 1/2 cup finely chopped pecans or walnuts.
