CHOCOLATE RASPBERRY TASSIES

The rich, gooey filling in these tarts has a hit of raspberry liqueur
- CHOCOLATE BUTTERCREAM:
- 1 recipe Chocolate Pastry, (recipe below)
- 6 oz. semisweet or bittersweet chocolate, chopped (1 cup)
- 2 Tbsp. butter
- 1 large egg, lightly beaten
- 1/3 cup granulated sugar
- 1 Tbsp. raspberry liqueur or raspberry-flavored syrup
- 2 tsp. vanilla
- 1 recipe Chocolate Buttercream
- 1/4 cup softened butter
- 1 cup powdered sugar
- 3 tablespoons unsweetened cocoa powder
- 2 tablespoons milk
- 1 cup powdered sugar until piping
Fudge Truffle Cheesecake

- CHOCOLATE CRUMB CRUST(recipe follows)
- 2 cups (12-oz. pkg.) HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet Chocolate Chips
- 3 packages (8 oz. each) cream cheese, softened
- 1 can (14 oz.) sweetened condensed milk (not evaporated milk)
- 4 eggs
- 2 teaspoons vanilla extract
Dark Chocolate-Espresso Shortbread

Combine first 5 ingredients in a medium bowl; set aside
- 1 1/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 cup unsweetened cocoa
- 1 teaspoon instant espresso powder or instant coffee powder (we tested with Café Bustello)
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 3 ounces white chocolate baking bar (we tested with Ghirardelli)
- 3 ounces unsweetened chocolate baking bars

PANKO-CRUSTED SALMON CROQUETTES

This recipe is a great way to use up leftover mashed potatoes
- 1 can (14.75 oz) salmon, picked over to remove any bones
- 1 package (4 oz) smoked salmon
- 1 cup mashed potatoes
- 1/2 cup peas (thawed if frozen)
- Zest of 1 lemon
- 1 Tbsp. Dijon mustard
- 1 Tbsp. hot sauce
- 1/4 tsp. ground black pepper
- 3 Tbsp. chopped fresh flat-leaf parsley
- 1 cup panko gbread crumbs
- Serve with tartar sauce
HOMEMADE FUDGE SAUCE

Combine chocolate chips and butter in covered microwave cooker and microwave on high for one minute
- 1-1/2 cups semi-sweet milk chocolate chips
- 2 tablespoons butter
- 1 can (5 ounces) evaporated milk
SPICY MEXICAN SHREDDED PORK (TINGA) TOSTADAS

Serves 4 to 6 The trimmed pork should weigh about 1 1/2 pounds
- TINGA:
- 2 pounds boneless pork butt , trimmed of excess fat and cut into 1-inch pieces (see note)
- 2 medium onions , 1 quartered and 1 chopped fine
- 5 medium garlic cloves , 3 peeled and smashed and 2 minced or pressed through garlic press (about 2 teaspoons)
- 4 sprigs fresh thyme
- Table salt
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1 (14.5-ounce) can tomato sauce
- 1 tablespoon ground chipotle powder (see note)
- 2 bay leaves
- TOSTADAS:
- 3/4 cup vegetable oil
- 12 (6-inch) corn tortillas (see note)
- Table salt
- GARNISHES:
- Queso fresco or feta cheese
- Fresh cilantro leaves
- Sour cream
- Diced avocado
- Lime wedges
AMARETTO BUTTER COOKIES

1. In a large bowl, with a mixer on medium speed, beat 1 cup butter and sugar until smooth
- 1 About 1 cup (1/2 lb.) butter or margarine at room temperature
- 1 cup sugar
- 1 large egg, separated
- 3 tablespoons almond-flavored liqueur, such as amaretto, or 1 tablespon almond extract
- 2 teaspoons grated orange peel
- 2 About 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups sliced almonds
QUICK PAD THAI

1. Cook pasta according to package directions
- 6 oz whole-wheat cappellini or angel-hair pasta (about 1/3 16 oz box) add to shopping list
- 1/2 lb chicken breast, cut into bite-size pieces (about 1 c precooked)
- 1 tbsp fish sauce
- 3 eggs
- 1/3 C chopped cilantro
- 2 tsp olive oil
- 1 tbsp creamy peanut butter
- 1 tbsp sugar
- 2 tbsp red chili flakes
- Note: Can use soy sauce instead of fish sauce. Barilla Plus angel hair pasta works well with this recipe.
- For those who say it's too dry, try this: decrease the amount of chili flakes and add chili sauce, or if you like the chili flakes squeeze fresh lime juice before serving adds just enough tang and doesn't take too much away from dish as a whole.

- 1/4 cup organic canola mayonnaise (such as Spectrum), divided
- 4 teaspoons fresh lemon juice, divided
- 2 1/2 teaspoons Dijon mustard, divided
- 1/4 cup finely chopped green onions
- 2 tablespoons minced red bell pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper
- 2 (6-ounce) packages skinless, boneless pink salmon
