Slow-Cooker Ham and Wild Rice Soup

Mix all ingredients except half-and-half in 3 1/2- to 4-quart slow cooker
- 2 cups diced cooked ham
- 3/4 cup uncooked wild rice
- 1 medium onion, chopped (1/2 cup)
- 1 bag (1 pound) Green Giant™ frozen mixed vegetables, thawed
- 1 3/4 cups Progresso™ chicken broth (from 32-ounce carton)
- 1 can (10.75 ounces) reduced-sodium cream of celery soup
- 1/4 teaspoon pepper
- 3 cups water
- 1/2 cup half-and-half
Quick and Easy Chicken Fried Rice

In a small bowl, beat egg with water
- 2 eggs
- 2 tbsp. water
- 2 tbsp. butter
- 2 tbsp. vegetable oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 (16 oz.) bag frozen peas and carrots, thawed, (optional)
- 4 cups cooked white rice, cold*** (see note)
- 1/4 cup soy sauce
- 1 tsp. black pepper
- 2 cups cooked chicken meat, or meat of choice
- It is very important to use cold rice for this recipe!
Coconut Macaroons with Chocolate

- 6 cups sweetened shredded coconut flakes
- 1 (14-oz.) can sweetened condensed milk
- 2 teaspoons vanilla extract
- 1 cup semisweet chocolate chips
- 1 Tablespoon vegetable oil
Bruschetta Chicken Breasts

Mix tomatoes, garlic, basil, stuffing, mozzarella, dressing and parmesan
- 2 large tomatoes, diced
- 1 clove garlic, minced
- 2 tsp. basil
- 1 pkg. stuffing mix
- 3/4 c. mozzarella, grated
- 4 tbsp. Italian Salad dressing
- 1/3 c. parmesan cheese, grated
- 6 - 8 chicken breasts
Cherry Pie

Place cherries in medium saucepan and place over heat
- 4 cups fresh or frozen tart cherries
- 1 to 1 1/2 cups granulated sugar
- 4 tablespoons cornstarch
- 1/8 tablespoon almond extract (optional)
- Your favorite pie crust or pie dough recipe for 2 crust pie
- 1 1/2 tablespoons butter, to dot
- 1 tablespoon granulated sugar, to sprinkle
Low-Fat Carrot Cake Muffins

Set oven to 350 degrees. Line 12 muffin tins with paper liners or spray tins with non-stick cooking spray
- 1 1⁄2 cup whole wheat flour, (or use half white and whole wheat)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1⁄2 tsp cinnamon
- 1 ⁄4 tsp nutmeg
- 1 ⁄4 tsp ginger
- 1 ⁄2 cup (up to 3/4) brown sugar, (or to taste, or can use brown sugar Splenda)
- 1 egg, slightly beaten
- 3 tbsp oil
- 2 tsp vanilla
- 1 ⁄2 cup non-fat milk, (or use low-fat milk)
- 8 oz can crushed pineapple, well drained
- 1 1⁄2 cup carrot, grated (squeeze out some of the moisture with hands)
- 1 ⁄2 cup raisins
