CHICKEN PARMESAN ZUCCHINI BOATS

Preheat oven to 350 degrees
- 2-3 zucchini
- 1 Tbsp oil
- 1 lb ground chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 1/2 cups RAGÚ Homestyle Traditional pasta sauce
- 1/2 cup shredded Parmesan cheese
- 1 cup shredded Mozzarella cheese
Easy Shepherd's Pie

Heat oven to 375ºF. Brown meat in large skillet; drain
- 1 lb. (450 g) lean ground beef
- 2 cups hot mashed potatoes
- 60 g (about 1/4 of 250-g pkg.) Philadelphia Brick Cream Cheese, cubed
- 1 cup Kraft Mozza-Cheddar Shredded Cheese, divided
- 2 cloves garlic, minced
- 4 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed
- 1 cup beef gravy
Swedish Baked Rice Pudding

In medium saucepan, combine all rice mixture ingredients
- Rice Mixture:
- 1/2 c. uncooked regular long grain rice
- 2 tbsp. sugar
- 2 c. milk
- 1 tbsp. margarine
- Pudding:
- 6 eggs
- 1 c. sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1/2 c. raisins
- 2 c. milk

- 2 packages (1/4 ounces each) active dry yeast
- 1 cup warm whole milk (110° to 115°)

- 3-1/2 cups all-purpose flour

- 2 packages (1/4 ounce each) active dry yeast
- 1/4 cup warm water (110° to 115°)
- 1-1/2 cups warm milk (110° to 115°)
- 1/3 cup shortening
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 4-1/2 to 5 cups all-purpose flour
- 1/4 cup butter, melted
- 1/2 cup butter
- 2 cups confectioners' sugar
- 5 teaspoons water
- 2 teaspoons McCormick® Pure Vanilla Extract
Asparagus with Mushrooms

In a large skillet, saute asparagus and ginger in oil for 2 to 3 minutes or until asparagus is crisp-tender
- 1 lb. fresh asparagus, trimmed and cut in 2" pieces
- 2 tsp. ground ginger
- 2 tbsp. canola oil
- 3 c. sliced fresh mushrooms
- 1 tsp. salt
- 1/8 tsp. sugar
- 1/8 tsp. pepper
Skinny Broccoli Salad

Mix all ingredients together in a large bowl and toss with reduced-fat ranch dressing
- 2 heads fresh broccoli, chopped
- 1 head fresh cauliflower, chopped
- 1/2 cup red pepper, chopped
- 1/2 cup green pepper, chopped
- 1/2 red onion, chopped
- 1/2 cup green olives
- 1 cup tomatoes, chopped
- 1 cup reduced-fat shredded sharp cheddar cheese
- 1 cup reduced-fat ranch dressing
No Mixer Double Chocolate Muffins

These double chocolate muffins are crazy good, and I mean crazy addictive as well
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1 cup buttermilk (see notes for homemade/DIY buttermilk)
- 1/4 cup melted butter
- 1/4 cup oil (any neutral flavored one will do such as canola)
- 2 teaspoons instant coffee
- 1 teaspoon vanilla extract
- 2 cups chocolate chips
Catalina Dressing
