Clam Chowder Makeover

In a large pot, saute the carrot, onion and celery in the butter until tender
- 2 10 oz cans of baby clams, drained and chopped
- 1 8 oz jar clam juice
- 32 oz chicken broth
- 1 medium potato, peeled and diced
- 1/4 C butter
- 2 tsp chicken bouillon
- 1/2 tsp fresh parsley, chopped
- 1/4 tsp curry powder
- 1/4 tsp pepper
- 2/3 C all purpose flour
- 1 C half & half
- 2 C milk
- 3/4 C carrot, chopped
- 3/4 C celery, chopped
- 3/4 C onion, chopped
- Salt to taste (I didn’t need to add salt to my recipe)
BBQ Chicken

TO COOK- Dump bag plus one bottle BBQ sauce into crock pot, cook on low for 6-8 hours
- IN THE BAG:
- 2 cups sweet potatoes
- 2 cups red and green bell pepper
- 1 cup carrots
- 2 cups onion
- 3 cups zucchini
- 2 T flour
- 1.5 lbs chicken
- 2 cloves garlic
- 1 t salt
Apple Cinnamon Muffins

Sift flour, sugar, baking powder, 1/2 tsp
- 2 c. flour
- 1/2 c. white sugar
- 3 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 c. butter
- 1 large apple, peeled and diced
- 1/4 c. finely chopped walnuts
- 1 egg
- 2/3 c. milk
- 1 tsp. cinnamon
- 1 tbsp. brown sugar
Baked Salmon with Herbs

Line 15 x 10" baking pan with foil; coat foil with nonstick cooking spray
- 2 1/2 c. soft bread crumbs (about 5 slices)
- 2 cloves garlic, minced
- 2 tbsp. parmesan cheese, grated
- 2 tsp. parsley flakes
- 1 tsp. thyme
- 1 tsp. rosemary
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 tbsp. butter, melted
- 1 tbsp. lemon juice
- 1 salmon filet (about 3 lb.) or salmon steaks

- 2 pkg. Jell-O, your choice
- 1 14 oz. can fruit cocktail in fruit juice, drained
- OR 1 c. sliced or diced fresh fruit

No Bake Brownies Recipe

Stir together chocolate chips, butter and milk in a saucepan over medium heat
- 1 cup chocolate chips
- 1/3 cup butter
- 1/3 cup milk
- 1 egg
- 1/3 cup confectioners sugar
- 2 cups crushed graham wafers or Oreo crumbs
- 1 cup unsweetened coconut
- 1/2 cup chopped walnuts
- You can replace with a nut of your choice if you do not care for walnuts
- Additional coconut to sprinkle on top.
PINEAPPLE UPSIDE DOWN INDIVIDUAL CUPCAKES

Preheat oven to 350 degrees
- Cake Ingredients:
- 2 eggs
- 2/3 C white sugar
- 4 Tbsp pineapple juice
- 2/3 C all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- Topping:
- 1/4 cup butter (1/2 stick or 4 Tbsp)
- 2/3 C brown sugar
- 1 -can pineapple rings
- 6 -maraschino cherries
Mango Almond Refrigerator Oatmeal

In a half pint jar or container, add oats, milk, yogurt, chia seeds, almond extract and honey
- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1-1/2 teaspoons dried chia seeds
- 1/8 teaspoon almond extract
- 1 teaspoon honey, optional (or substitute any preferred sweetener)
- 1/4 cup diced mango (approx. half of a small mango)
Spinach-Avocado Caesar Salad

Toast the bread. Brush with the oil to coat
- 2 slices crusty whole wheat bread
- 1 tbsp. olive oil
- 1/4 tsp. Italian seasoning
- 1 hard-cooked egg
- 1 avocado, coarsely chopped
- 2 tbsp. warm water
- 2 tbsp. grated Romano cheese
- 2 tsp. red wine vinegar
- 1 tsp. minced garlic
- 1/4 tsp. Dijon mustard
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 6 c. baby spinach
