Double Chocolate Avocado and Zucchini Bread

Preheat oven to 350 degrees F
- 1/4 cup butter, softened
- 1/2 of a California Avocado
- 2 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 2 (1oz) semi-sweet baking chocolate squares, melted
- 2 cups zucchini, grated
- 1/2 cup sour cream
- 2 cups flour
- 3 tbsp cocoa powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 3/4 cup semi sweet chocolate chips
Zucchini Cranberry Bread Recipe

In a small bowl, cream butter and sugar
- 2 tablespoons butter, softened
- 1/2 cup sugar
- 1 egg
- 1-1/2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup shredded zucchini
- 2/3 cup whole-berry cranberry sauce
- 1/2 cup chopped walnuts
- 1-1/2 teaspoons grated orange peel
Candy Corn Crispy Treats

Line a 9”x9” baking pan with foil and lightly spray with non-stick cooking spray
- 6 Tablespoons Challenge Butter
- 10 oz. candy corn flavored marshmallows (or miniature marshmallows would work too)
- 6 cups rice Krispie cereal
- 1/4 teaspoon salt
- 1/4 cup candy corn candies
- 1/4 cup white chocolate candy melts, melted according to package instructions

In bread machine pan, place the first 10 ingredients in order suggested by manufacturer

- 1-2/3 cups warm milk (70° to 80°)
- 2 eggs
- 3 tablespoons butter, softened
- 3/4 cup mashed potato flakes
- 1/4 cup sugar
- 2 teaspoons salt
- 1-1/4 teaspoons ground Tone's® Ground Cinnamon
- 1 teaspoon grated orange peel
- 4 cups bread flour
- 1 tablespoon active dry yeast
- 1 cup dried cranberries
- 1 cup confectioners' sugar
- 2 to 3 tablespoons orange juice
- 3 tablespoons chopped dried cranberries, optional
Orange Lemon Poppy Seed Muffins

- 2 and 1/3 cups (292g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 3 Tablespoons poppy seeds
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115g) salted butter, melted*
- juice and zest of 2 medium lemons*
- juice and zest of 1 orange*
- 2 large eggs
- 1/2 cup (120g) non-fat or low-fat Greek or regular yogurt
- 1 teaspoon vanilla extract
- coarse sugar, for sprinkling

- 1 cup butter, room temperature
- 1 cup brown sugar, lightly packed
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 2 eggs, large
- 1 teaspoon vanilla extract
- 3 cups flour, unbleached or all-purpose
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 ounces semi-sweet chocolate chips (approximately 2 cup)
- 6 ounces milk chocolate chips (approximately 1 cup)
Twice Baked Potato Casserole

Preheat oven to 400 degrees
- 8 medium potatoes, scrubbed and dried
- 2 Tbls olive oil
- 1 Tbls kosher salt
- 3/4 pound sliced bacon, cooked and crumbled (how to bake bacon)
- 2 cups shredded sharp cheddar cheese
- 3/4 cup mayonnaise
- 1/2 cup sour cream
- 5-6 green onions, sliced
- salt and pepper to taste
SLOW COOKER CHEESY HAM CHOWDER

To a 6 qt slow cooker, add the first 8 ingredients (potatoes through and including chicken stock)
- 1 1/2 1 1/2 1/2" 3 russet potatoes, peeled and diced into 1/2" cubes (about 3 medium sized potatoes)
- 20 20 20 oz canned corn (drained), or frozen corn (thawed)
- 4 4 1/2" cups cubed ham steaks, diced into 1/2" cubes
- 1 1 1 large yellow onion, diced
- 4 4 4 ribs celery, diced
- 4-5 4-5 4-5 cloves garlic, minced
- 1/2 1/2 1/2 tsp black pepper
- 4 4 4 cups chicken stock (or broth)
- 2 2 2 cups Promised Land Dairy Whole Milk
- 2 2 2 Tbsp cornstarch
- 2 2 2 cups shredded cheddar cheese
- 1 1 1 cup sour cream
- 2 2 2 Tbsp fresh minced parsley
- extra parsley, pepper and cheese, for garnish

- VINAIGRETTE:
- 6 medium red potatoes, cut into 1-inch cubes
- 1 large red onion, cut into 1-inch pieces
- 1/4 pound fresh green beans, trimmed and halved
- 2 tablespoons olive oil
- 8 bacon strips, cooked and crumbled
- 2 tablespoons cider vinegar
- 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
