Magic Cookie Bars from Wilderness Lodge - Disney

Preheat oven to 350 degrees F
- Pan Spray
- 1 cup graham cracker crumbs
- 1/2 cup butter, melted
- 6 ounces chocolate chips
- 6 ounces butterscotch chips
- 1 cup flaked sweetened coconut

Slowly melt the chocolate in a double boiler or in the microwave in increments of 30 seconds
- 14-16 ounces high-quality milk chocolate (or 60% dark chocolate)

Slowly heat milk. Brown the bacon first, then render until crisp
- 5 cups milk, warmed
- 1/2 pound bacon
- 10 tablespoons butter
- 1 cup celery
- 2 each red onions, finely chopped
- 1 1/2 cups flour
- 1 quart chicken stock
- 1 pound cheddar cheese, shredded
- To taste - kosher salt
- To taste - freshly ground black pepper
- 1 1/2 teaspoons Tabasco sauce

In a small skillet over medium heat add 3 ounces vinegar and the sugar
- 2 ounces brown sugar
- 3 ounces plus 1 ounce apple cider vinegar
- 1 clove garlic, minced
- 1 gala apple, peeled, cored and medium diced
- 1 lemon
- 4 ounces olive oil
- 2 ounces canola oil
- 1 teaspoon fresh thyme
- salt
Green Bean Fries

Heat the oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C)
- Oil for frying
- 1 pound fresh green beans, trimmed
- 1/2 cup water
- 1 egg
- 1/2 cup milk
- 2 cups seasoned bread crumbs
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup all-purpose flour

- 1/3 cup sugar
- 2 1/2 teaspoons baking powder

- 1/4 teaspoon nutmeg
- 3/4 cups cold butter
- 1 cup buttermilk

Cut tough stem ends from Brussels sprouts and peel off bruised outer leaves
- 2 pounds Brussels sprouts
- 1 tablespoon coarse salt, plus more to taste
- 2 tablespoons extra-virgin olive oil
- Freshly ground pepper, to taste
- 1/2 cup (1 stick) unsalted butter, cut into pieces and chilled
- 2 tablespoons balsamic vinegar
- 1/4 cup capers, drained, for garnish
- 2 tablespoons shredded Kasseri cheese*, for garnish
- Kasseri cheese is a Greek sheep’s-milk cheese that is semi hard and slightly tangy. It can be found in specialty markets. Provolone may be substituted.

Shortbread: Cream together butter and sugar with a mixer until light and fluffy
- Shortbread:
- 1 cup (2 sticks) butter, room temperature
- (1/2 cup) sugar
- (2 cups) all purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 tablespoons milk
- Peanut Butter Filling:
- 1 1/2 cups creamy peanut butter (peanut allergies? try almond butter!)
- 1/2 cup confectioners’ sugar
- 1/2 tsp vanilla extract
- Chocolate Topping:
- 8-oz milk chocolate
