Pecan Pie Bars

Serves: 16-20 bars Gooey raisins, pecans and a flaky shortbread crust
- SHORTBREAD CRUST:
- 1 cup cake flour
- 1/4 cup sugar
- 2 Tbsp cornstarch
- 1/4 tsp salt
- 1/4 cup canola oil
- FILLING:
- 2 eggs
- 1-1/2 cup dark brown sugar, packed
- 1/4 cup + 1 Tbsp canola oil
- 1/2 tsp cider vinegar
- 3/4 tsp vanilla extract
- 3/4 cup raisins
- 1/2 cup chopped pecans
