Banana Blueberry Muffins

- 3 large ripe bananas
- 3 ⁄4 cup sugar
- 1 egg, slightly beaten
- 1 ⁄3 cup melted butter
- 1 cup blueberries
- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 1 1⁄2 cups flour
Pastry Cream

Place the milk, half the sugar and the vanilla bean in a saucepan over medium heat
- 2 cups milk
- 1/2 cup white sugar
- 1 vanilla bean, halved lengthwise or teaspoon vanilla
- 6 egg yolks
- 4 tablespoons all-purpose flour
- 4 tablespoons unsalted butter
- 1 pinch salt
Triple Threat Chocolate Fudge Peanut Butter Cookies

Cream butter, peanut butter, sugar, eggs and vanilla until fluffy
- 1 cup butter, at room temperature
- 1/2 cup peanut butter
- 1 1/2 cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 1/2 cup dark cocoa powder (such as Hershey’s Special Dark)
- 1 heaping teaspoon of baking soda
- 1/4 teaspoon salt
- 4 ounces semi-sweet chocolate, melted
- 1 cup milk chocolate chips
Chicken Bacon Alfredo Potato Skins

Serves: about 4-5 dozen
- 1 bag Blushing Belles from The Little Potato Company
- 2 tbsp oil
- 1 tsp salt
- 1/2 cup Alfredo sauce (prepared or homemade)
- 1/2 cup finely chopped, cooked chicken
- 4 slices finely chopped, cooked bacon
- 1 cup shredded cheddar cheese
- green onion for garnish
Hawaiian Pineapple Pie

Preheat oven to 250 degrees Combine ingredients for crust in ungreased 9-inch pie pan
- CRUST
- 2 tsp melted margarine
- 2 Tbsp water
- 1 c graham cracker crumbs
- FILLING
- 1 Tbsp gelatin, unflavored
- 2 Tbsp cool water
- 1/4 c boiling water
- 1/2 c cottage cheese, lowfat
- 1/4 c skim milk
- 1 tsp vanilla extract
- 1 tsp coconut extract
- 1 1/2 Tbsp sugar
- 2 c crushed pineapple, drained
- GARNISH
- ground cinnamon
Black Bean and Cabbage

- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 leek, chopped
- 1 tablespoon chopped fresh thyme
- 1 tablespoon paprika
- 3 Cloves of garlic
- 1/4 lbs. potatoes, coarsely chopped
- 14 oz. can black beans
- 3 1/2 cups low-sodium vegetable stock
- 6 oz. cabbage or scallions shredded
*Baked Potato Soup

This soup looks and tastes just like the real thing, but healthier
- 1 medium onion (about 2 1/2 cups)
- 2 small stalks celery (about 1/2 cup)
- 1-2 cloves garlic
- 3-4 tablespoons organic butter, or to taste (divided)
- 4 pieces turkey bacon
- 1 medium head of cauliflower (about 1 1/2 pounds after cutting into florets)
- 2 (32oz) boxes chicken broth (sugar and yeast free) – divided
- 1 piece kombu, ground or whole (optional, no taste) Sea vegetable, packed with essential minerals
- 3 pieces astragalus (optional, no taste) a root that strengthens immune system
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper, or to taste
- 1-2 tablespoons sour cream or plain Greek yogurt, optional – for garnish
- 3-4 green onions, for garnish

- Streusel-Nut Topping:
- 1/2 cup butter, softened

- 1/4 cup buttermilk or sour milk*

- 2 cups shredded, peeled apple (about 4 medium)
- 1 cup chopped walnuts or pecans

- 1/4 cup of packed brown sugar
- 3 tablespoons of all-purpose flour
