Spicy Sausage Skillet

Heat olive oil over medium hight heat in a 12-inch oven safe skillet until hot
- 1 Tbsp olive oil
- 1 lb smoked sausage, sliced into 1/4" slices
- 2 Tbsp dried minced onion flakes
- 1 tsp garlic powder
- 2 cups low-sodium chicken broth
- 1 (10 oz) can Rotel tomatoes
- 1/2 cup heavy cream
- 8 oz campanelle pasta (or penne)
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 cup Monterey Jack cheese, shredded
- 1/3 cup thinly sliced scallions
French Toast in a Mug

Into a mug, whisk together egg, milk, sugar, vanilla, and cinnamon
- 1 large egg
- 1/2 cup milk
- 1 1/2 tablespoons granulated sugar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 1/2 cups cinnamon raisin bread, cut into cubes
- 2 tablespoons maple syrup, for garnish, optional
- Powdered sugar, for garnish, optional
- Butter, for garnish, optional
Chick-Fil-A Copycat Chicken Sandwich

Start by whisking the egg, milk, paprika, and water together in a bowl
- 1 large egg
- 1/2 c. milk
- 1 tsp. paprika
- 2 tbsp. water
- 1 c. all-purpose flour
- 1/2 c. whole-wheat flour
- 1 tbsp. powdered milk
- 1 tbsp. confectioners’ sugar
- 1/4 tsp. baking soda
- 1/4 tsp. dry mustard
- kosher salt
- Freshly ground black pepper
- 2 c. peanut oil, for frying
- 2 boneless skinless chicken breasts
- Pickles, for serving
- Butter, for bread
- 2 Hamburger buns
Homemade Grand Marnier

Rinse and dry all of the oranges, then gently remove the surface layer of the peel with a vegetable peeler
- 8-10 oranges – you’ll want unsprayed or organic oranges, since you will be using the peels
- 1.75 liter bottle of Brandy
- A large glass jar- something with a wide opening to get the orange peels in and out
Chocolate Almond Tiramisu Cake

Grease and line the base and sides of a 22cm springform tin with baking paper
- 6 single scoops ground, good quality coffee (such as Bellaroma)
- 60 ml almond or hazelnut (e.g. Amaretto or Frangelico)(~ 4 Tbs)
- 250 g sponge finger biscuits
- 200 g dark cooking chocolate, roughly chopped (~1 c)
- 125 ml thickened cream (~ 4 oz)
- 100 g caster sugar (~1/2 c)
- 3 x250g tubs mascarpone cheese
- 100 g flaked almond, toasted ~ 1/2 c)
Lime Angel Food Cake with Raspberry Sauce

Preheat oven to 350° F. Sift together flour and powdered sugar
- Cake:
- 10 - 12 large egg whites (about 1 1/2 cups)
- 1 1/2 cups powdered sugar
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tablespoon lime zest
- 2 teaspoons lime juice
- Raspberry Sauce:
- 1 1/2 cups seedless red raspberry preserves
- 2 Tablespoons lime juice
Brûléed Key Lime Tarts

- 10 Oreo cookies
- 2 tablespoons melted butter
- 5 egg yolks
- One 14-ounce can sweetened condensed milk
- 2/3 cup Key lime juice
- Finely grated zest of 1 lime
- 3 tablespoons granulated sugar, plus 8 teaspoons for sprinkling
- 3 kaffir lime leaves (optional)

- Equipment:
- 3/4 cup whole milk
- 1/4 cup water
- 2 large eggs
- 1 teaspoon grated lemon zest
- 1 tablespoon unsalted butter, melted
- 3/4 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- A popover pan with 6 (2/3-cup) cups (see cooks' note, below)
