  • 1 large ripe, creamy avocado, peeled, pitted and coarsely chopped
  • 1 tablespoon green onion, chopped
  • 4 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper, as needed
  • 2 tablespoon cilantro, coarsely chopped

  • 1/2 cup chicken stock
  • freshly cracked black pepper, as needed
  • 1 teaspoon extra-virgin olive oil, plus more for drizzling
  • 1 teaspoon mint leaves, minced
  • 4 skinless salmon fillets, about 5-6 oz each
