Pencil Eraser- A Back to School Cocktail for Parents

I call this cocktail a Pencil Eraser
- 1 lemon cut into 8 wedges
- 3 strawberries, hulled and quartered lengthwise
- 4 ounces simple syrup
- 6 ounces vodka
- 1 ounce cranberry juice
Shrimp Kabobs with Tomatillo-Avocado Salsa

- 1/3 cup kosher salt
- 1/3 cup brown sugar, packed
- 1 quart cool water
- 24 large shrimp, peeled and de-veined
- 1/4 cup olive oil
- 3 teaspoon garlic, minced
- 1 tablespoon flat-leaf parsley, chopped
- 1/4 teaspoon red pepper flakes
- 2 tablespoon dry white wine
- 4 oz fresh tomatillos, husked, washed, and coarsely chopped
- 1 teaspoon serrano chile, seeded and coarsely chopped, or to taste
- 1 large ripe, creamy avocado, peeled, pitted and coarsely chopped
- 1 tablespoon green onion, chopped
- 4 tablespoon extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper, as needed
- 2 tablespoon cilantro, coarsely chopped
- lemon slices as needed
Spiced Salmon with Wine Braised Shallots, Edamame & Sunchoke Puree

I am sure you have heard the phrase white wine with fish
- 1 1⁄2 lb sunchokes, also known as jerusalem artichokes
- 1 medium yukon gold potato
- 3 T unsalted butter, divided
- coarse salt, as needed
- 1 t whole black peppercorns
- 1 t cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon mustard seeds
- 2 teaspoon sugar, divided
- 8 shallots, peeled and thinly sliced
- 1 1/2 cups spicy, fruity red wine, such as zinfandel
- 1 cup fresh or frozen shelled edamame
- 1/2 cup chicken stock
- freshly cracked black pepper, as needed
- 1 teaspoon extra-virgin olive oil, plus more for drizzling
- 1 teaspoon mint leaves, minced
- 4 skinless salmon fillets, about 5-6 oz each
