- 1 1/2 cup plus 2 tablespoons prosecco, divided
- 1 1/3 cup sugar, divided

Tropical Guaro Bloody Mary

Guaro is the traditional alcoholic beverage of choice in Costa Rica
- 36 ounces tomato juice
- 1 stalk celery with leaves, minced
- 2 teaspoons prepared horseradish
- 1 teaspoon grated ginger
- 1 lime, juice only
- 1/2 teaspoon Lizano sauce (substitute Worcestershire sauce)
- 1/2 teaspoon celery salt
- 1/4 teaspoon sea salt
- 12 dashes hot sauce
- 1 1/2 cups guaro
- Stalks of celery as garnish, as needed
- Cilantro sprigs as garnish, to taste
- Lime wedges as garnish, optional
Chocolate Pecan Tart

- 2 cups pecan pieces, lightly toasted
- 3/4 cup sugar
- 3 cup all-purpose flour
- 8 oz unsalted butter, cubed and cold
- 3 oz large eggs
- 1 t vanilla
- 5 oz bittersweet chocolate, chopped
- 5 oz semi-sweet chocolate, chopped
- 1 1/4 c heavy cream
- 1/3 c whole milk
- 1/2 t kosher salt
- 6 oz milk chocolate, melted
- 1 1/2 c whole pecan, lightly toasted

- 1 tablespoon Hawaiian alaea pink salt
- 1 lime wedge
- 1 (1-inch) piece English cucumber, quartered
- 2 or 3 thin rounds fresh jalapeño, to taste, plus more for garnish 3 or 4 sprigs fresh cilantro, leaves only, plus more for garnish
- 1 fl oz freshly squeezed lime juice
- 1/2 fl oz agave syrup (agave nectar and water in a 1:1 ratio)
- 2 pony shots / 60 ml / 2 fl oz Jose Cuervo Silver Tequila

- 1 bottle fruity red wine with a nice tannic quality
- 1/2-cup confectioners sugar
- 1 maybe a scant 2 teaspoons cornstarch dissolved in 2 tablespoons water
- 2 pounds cherries, left whole with pits in tact
- 10 or 12 four-inch sprigs of peppermint stems and leaves, tied in a bundle
- Extra mint leaves as garnish (optional)
