Hot Fudge Cake

- 1 cup flour
- 2 tablespoons butter, melted
- 3/4 cup granulated sugar
- 1 cup chopped walnuts
- 2 tablespoons cocoa
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 teaspoons baking powder
- 1 cup brown sugar
- 1/4 cup cocoa
- 1 3/4 cups hot tap water
Crab Pasta Casserole

Cook pasta according to directions
- 8 oz Uncooked pasta
- 2 large Onions chopped
- 1/2 lb Mushrooms-fresh sliced
- 1/2 cup Green pepper chopped
- 2 clove Garlic-minced
- 1/2 cup Butter
- 16 oz Crab meat- chopped
- 1/2 cup Sour cream
- 2 tsp Salt
- 1 1/2 tsp Basil
- 1 1/2 cup Shredded cheddar

Mama's Eggnog

In a large bowl, using an electric mixer, beat the egg yolks with 1/2 cup of the sugar until thick

- 2 cups whipping cream

- 1 cup bourbon
- 1 tbsp vanilla extract
- Freshly grated nutmeg (optional)
Jambalaya

We enjoy spicier food, so I increased the Cajun seasoning and the cayenne pepper to 3 teaspoons each
- 1 1/2 lbs. skinless, boneless chicken - cut into 1" cubes
- 1 lb. andouille sausage or smoked sausage, sliced
- 1 (28 oz) can diced tomatoes with juice
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1 1/2 cups chopped celery
- 1 cup chicken broth
- 2 tsp dried oregano
- 2 tsp dried parsley
- 2 tsp Cajun seasoning
- 1 tsp cayenne pepper
- 1/2 tsp. dried thyme
- 1 lb. frozen cooked shrimp
Fettuccine Alfredo

1. In large sauce pot, cook fettuccine as directed on package
- 8 oz uncooked fettuccine
- 1/2 cup butter or margarine
- 1/2 cup whipping cream
- 3/4 cup freshly shredded Parmesan cheese
- 1/2 teaspoon salt
- 1/8 teaspoon black or white pepper
- Chopped fresh parsley
Chicken Salad

In a bowl, combine the chicken, onion, celery, and egg; toss to blend
- 8 to 12 ounces chopped cooked chicken
- 3 Tbsp chopped sweet onion, or shallots or green onion
- 2 to 3 Tbsp chopped celery
- 1 large egg, hard boiled, chopped
- 1 chopped dill pickle
- 1/3 to 1/2 cup mayonnaise, or as needed
- 1/4 tsp salt, or to taste
- 1/8 tsp freshly ground black pepper
- Spinach leaves or your favorite lettuce
- 8 slices bread, toasted or not, optional
CROCKPOT BROCCOLI CHEESE SOUP

- 1 lb. Velveeta cheese, cubed
- 1 (10 oz.) package frozen chopped broccoli
Twice-Baked Potatoes

- 6 large shallots, sliced 1/8 in. thick
- Nonstick spray
- 1/2 cup(s) milk
- 1 teaspoon(s) salt
- 1/2 cup(s) reduced-fat garlic and herb cheese spread
- 1 cup(s) shredded Colby or Cheddar cheese
- Garnish: finely chopped parsley and red bell pepper
