Creamy Pesto Dip

Mix sour cream and pesto until well blended
- 1 cup sour cream (or you can use plain yogurt)
- 1/4 cup pesto
- Chopped tomato, if desired
- Assorted fresh veggies
Baked Chicken

Preheat oven to 400 degrees
- 1 spray cooking spray
- 1 pound uncooked boneless, skinless chicken breast four 4 oz halves
- 1/2 tsp table salt
- 1/4 tsp black pepper, freshly ground
- 1 tsp olive oil
- 2 tsp fresh lemon juice, or more to taste
- 2 tsp rosemary, fresh, chopped
- 2 tsp parsley, fresh, chopped
- 1/4 cup canned chicken broth
- 1/2 medium lemon, quartered (for garnish) Or Lime
Golden Gravy Pasta

Boil water for pasta; follow directions on box
- 1/2 cup nutritional yeast
- 1/2 cup whole wheat flour
- 1/3 cup canola oil or margarine (or a slightly smaller quantity of both if you'd like it to be extra creamy)
- 2 teaspoons minced garlic or 1 tsp. garlic salt
- 1 tsp cumin
- 2 teaspoons chopped fresh thyme (or 1 tsp. dried)
- 2 teaspoons chopped fresh sage (or 1 tsp. dried)
- 4 cups water
- 1/4 cup soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 box fusilli spiral pasta
Fried Green Tomato Salad

1. Preheat frying oil to 350 degrees
- For the Balsamic Vinaigrette dressing:
- Coconut oil for frying
- 1 1/2 cups cornmeal
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup flour
- 3 eggs, beaten
- 2 Green tomatoes, sliced
- 2 peaches, pitted and thinly sliced
- 1/4 cup slivered almonds
- 1/2 cup crumbled feta cheese
- 16 ounces mixed greens
- 2 tablespoons Balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon Honey
- 1/4 cup Olive oil
- Salt
- Pepper

Peanut Butter Protein Cookies

Oven 350. Spray a cookie sheet with COCONUT OIL and then mix all ingredients together
- 1 Cup of Peanut Butter
- 1 scoop protein powder
- 1 egg white
- 1 Tsp coconut oil
- 1 Tsp of Cinnamon

- Dark Chocolate topping (optional)
