Ingredients
- 8 to 12 ounces chopped cooked chicken
- 3 Tbsp chopped sweet onion, or shallots or green onion
- 2 to 3 Tbsp chopped celery
- 1 large egg, hard boiled, chopped
- 1 chopped dill pickle
- 1/3 to 1/2 cup mayonnaise, or as needed
- 1/4 tsp salt, or to taste
- 1/8 tsp freshly ground black pepper
- Spinach leaves or your favorite lettuce
- 8 slices bread, toasted or not, optional

Preparation
Step 1
In a bowl, combine the chicken, onion, celery, and egg; toss to blend. Add pickles, 1/3 cup of mayonnaise, salt, and pepper, blend well. Add more mayonnaise, if desired.
Lay your bread out…top with spinach leaves; top with chicken salad, cover with another piece of bread.
Or eat your chicken salad on a bed of spinach or your favorite lettuce leaves…
