Ingredients

    ounces chopped cooked chicken

  • 3

    Tbsp chopped sweet onion, or shallots or green onion

  • 2 to 3

    Tbsp chopped celery

  • 1

    large egg, hard boiled, chopped

  • 1

    chopped dill pickle

  • 1/3 to 1/2

    cup mayonnaise, or as needed

  • 1/4

    tsp salt, or to taste

  • 1/8

    tsp freshly ground black pepper

  • Spinach leaves or your favorite lettuce

    slices bread, toasted or not, optional

Directions

In a bowl, combine the chicken, onion, celery, and egg; toss to blend. Add pickles, 1/3 cup of mayonnaise, salt, and pepper, blend well. Add more mayonnaise, if desired.
