Corned Beef Hash

Heat the oil in a medium skillet over high heat
- 2 tablespoons vegetable oil
- 8 ounces cooked corned beef, diced
- 1 white onion, finely chopped
- 1 bell pepper, finely chopped
- 2 medium baking potatoes, peeled and shredded (about 2 cups)
- 4 tablespoons butter
- 4 large eggs
- Kosher salt and freshly ground pepper
- 4 slices cheese (about 2 ounces)
MONTE CRISTO SANDWICHES

n a shallow dish, beat eggs or egg substitute with 1/4 cup water
- 2 eggs or Egg Beaters equivalent
- 3 tbsp. Dijonnaise mustard
- 2 tbsp. sweet pickle relish
- 8 slices thick bread
- 8 oz left-over or deli-sliced ham
- 8 slices reduced-fat Swiss cheese
- 2 tbsp. butter
- cooking spray
Chinese stir-fried Lo-Mein

Combine ground meat and oyster sauce in a bowl
- 1 Lb ground pork (you can substitute with ground chicken or beef)
- 2 Tbls Oyster sauce
- 1 Tbl cooking oil
- 3 ozs Chinese Sausage (Lop Choeng), coarsely chopped
- 1 Tsp Fresh Garlic, minced
- 1 Tsp dried Red pepper flakes
- 1/2 Cup water Chestnuts, coarsely chopped
- 4 Green Onions, chopped, separating green part from the white
- 1/2 Cup sliced Mushroom (optional)
- 1/2 Cup Bean sprouts (optional)
- 3 Tsp cornstarch dissolved in 5 Tsp of water
- Lo Mein noodles cooked Al Dente
- Sauce
- 1 Cup of chicken stock
- 2 Tbls Hoisin sauce
- 1 Tbl Soy sauce
- 1 Tbl Worcestershire sauce
- 1 Tsp Sesame oil
Applesauce Spice Cupcakes

Preheat oven to 350 degrees
- 1/2 cup canola oil
- 4 large eggs, room temperature
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 2 cups white, whole-wheat flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2 teaspoons cinnamon
- 1/8 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1 1/2 cups applesauce
- Brown-Sugar Cream Cheese Frosting
- 1/2 cup (1 stick) butter, room temperature
- 8 ounces cream cheese, room temperature
- 1 cup packed light brown sugar
- 1 teaspoon vanilla
- pinch of salt
Baked Macaroni and Cheese

In a large pot of boiling, salted water cook the pasta to al dente
- Topping:
- 1/2 pound elbow macaroni
- 3 tablespoons butter
- 3 tablespoons flour
- 1 tablespoon powdered mustard
- 3 cups milk
- 1/2 cup yellow onion, finely diced
- 1 bay leaf
- 1/2 teaspoon paprika
- 1 large egg
- 12 ounces sharp cheddar, shredded
- 1 teaspoon kosher salt
- Fresh black pepper
- 3 tablespoons butter
- 1 cup panko bread crumbs
Banana Pudding Cake

- 1 box yellow cake mix (& ingredients to make cake)
- box (small) instant banana pudding
- 4 c milk
- 8 oz whipped topping
- 20 vanilla wafers, crushed

Carrot Cake Waffle Breakfast Sandwich

- 2 whole-grain frozen waffles
- 2 tablespoons reduced-fat cream cheese (Neufchâtel)
- 1/2 cup shredded carrot
- 2 tablespoons raisins
- 1 tablespoon chopped walnuts
- 2 teaspoons pure maple syrup
CHOCOLATE PEANUT-BUTTER NO BAKE COOKIES

- 1/2 cup Milk

- 1 tablespoon Vanilla Extract
- 3 cups Oatmeal
