Fabulous Hot Fudge Peanut Butter Pie

• In large bowl, beat peanut butter, cream cheese, and sugar until creamy
- For the pie:
- 1 chocolate graham cracker crust
- 1 cup peanut butter
- 1 package (8 ounces) cream cheese, room temperature
- 1 tub (12 ounces) Cool Whip, divided
- 1 jar (11.75 ounces) hot fudge topping, divided
- 1/2 cup sugar
- For the topping:
- 2 tablespoons hot fudge
- 2 tablespoons peanut butter
HAWAIIAN BREAD

Directions In small bowl dissolve yeast in 1/2 cup warm water
- 2 .25 ounce, envelopes active dry yeast
- 1/2 cup warm water
- 3 eggs
- 1 cup pineapple juice
- 1/2 cup water
- 3/4 cup white sugar
- 1/2 tsp. ground ginger
- 1 tsp. vanilla extract
- 1/2 cup butter, melted
- 6-7 cup all-purpose flour or bread flour
Peach Baked Oatmeal

1. In large mixing bowl, combine oil, eggs, and sugar
- 1/2 cup oil
- 4 eggs
- 1-1 1/2 cups sugar, depending on your taste preference
- 3 cups dry rolled, or quick, oatmeal, uncooked
- 4 tsp. baking powder
- 1 tsp. salt
- 2 tsp. vanilla extract
- 1 pint fresh, or canned, peaches, chopped (if canned, reserve liquid)
- 2 cups milk
SHREDDED BEEF CHIMICHANGAS

Preheat oven to 275 degrees
- 1 1/2 lbs of round roast (chuck roast is flavorful but isn’t as lean)
- 1 7 oz can of whole green chiles reserve the juice
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp cumin powder
- 1 tsp dried oregano
- 2-3 cloves of chopped garlic
- 1-2 cups of beef broth
- 1 sweet yellow onion, sliced thinly
- 1 tsp olive oil
- Salt and pepper to taste
- Flour tortillas
- Cheddar cheese, shredded (or low fat Mexican cheese blend)
Simply Southern Fried Chicken

1. Place water and salt in a pot over high heat until salt dissolves
- 1 (3-5 lbs) whole chicken, cut into eight pieces
- 1/4 cup salt
- 2 quarts ice water
- Crisco for frying
- Coconut oil for frying
- 2 cups flour for dredging
- 1 tablespoon salt
- 1/4 tablespoon pepper
