Dijon Chicken Linguine with Crimini Mushrooms and Toasted Almonds

Heat olive oil in a large heavy bottomed frying pan over medium low heat
- 350 gram package fresh linguine, cooked
- 4 boneless skinless chicken breasts
- 1 cup sliced crimini mushrooms (you can also use button mushrooms)
- 3 tablespoons olive oil
- 4 cloves minced garlic
- Salt and pepper to season
- 1/2 cup toasted slivered almonds
- 2 cups whipping cream
- 3 tbsp Dijon mustard
- Salt and pepper to season

- Crust:
- 3/4 cup butter, room temperature (1 1/2 cubes)
- 1/2 cup brown sugar, packed
- 1 1/2 cup flour
- 1 cup chopped nuts
- Filling:
- 1 small box lemon flavored gelatin
- 1 cup hot water
- 3/4 cup sugar
- 8 oz cream cheese
- 1 cup whipping cream
- Topping:
- 2 small boxes or 1 large box strawberry flavored gelatin
- 3 cups hot water
- fresh strawberries, chopped, optional
Oven Baked Zucchini Chips

Zucchini Chips will continue to get crispier while cooling
- 1 (large) zucchini, cut into 1/8" - 1/4" slices
- 1/3 cup whole grain breadcrumbs
- 1/4 cup finely grated parmesean cheese, reduced fat
- 1/4 teaspoon black pepper
- Sea salt to taste
- 1/8 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper

- 2/3 cup sliced carrots
- 1/2 cup diced onion
- 2 garlic cloves, minced
- 3 cups fat-free broth
- 1 1/2 cups diced green cabbage
- 1/2 cup green beans
- 1 Tbsp tomato paste
- 1/2 tsp dried basil
- 1/4 tsp dried oregano
- 1/4 tsp salt
- 1/2 cup diced zucchini
Fire House Casserole

- 1 lb. ground beef
- 1 (8 oz.) tub sour cream
- 1 package Doritos
- 1 package taco seasoning
- 1 small onion, chopped
- 1 can crescent rolls
- 1 can chilies, chopped
- 1 package cheese, grated
- 1/2 cup water

Season the beef shoulder all over with salt and pepper then brown in a large heavy pot over medium heat
- Beef:
- 2 Lbs Beef shoulder roast
- Salt and pepper, to taste
- 2 Onions, peeled and sliced
- 1 Garlic bulb, cloves removed and peeled
- Mole Sauce:
- 4 ounces dried New Mexico chilies
- 2 ounces Ancho chiles
- 2 ounces Pasilla chiles
- 2 Tbls Cumin seeds, toasted
- 1 Tbl Salt
- 1 Tsp Dried Oregano
- 1 Tbl White Wine Vinegar
- 2 Bags dried corn husks, about 3 dozen
- Masa Dough:
- 4 Cups Masa flour
- 1 Tbl Baking powder
- 2 Tsp salt
- 1/2 Tsp Black Pepper
- 1/2 Tsp Smoked Paprika
- 4 Cups reserved beef broth, warm
- 1 Cup Lard
