Chicken Salad Sliders

In a small bowl, combine the lemon juice, mayonnaise and salt
- tablespoons fresh lemon juice
- 1/2 cup mayonnaise
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 1/2 cups finely diced cooked chicken
- 1 cup finely diced celery
- 1/3 cup slivered almonds
- 12 mini slider rolls
Sausage, Bean, and Spinach Dip

1. Preheat oven to 375°
- 1 sweet onion, diced $
- 1 red bell pepper, diced $
- 1 (1-lb.) package hot ground pork sausage
- 2 garlic cloves, minced
- 1 teaspoon chopped fresh thyme
- 1/2 cup dry white wine $
- 1 (8-oz.) package cream cheese, softened $
- 1 (6-oz.) package fresh baby spinach, coarsely chopped
- 1/4 teaspoon salt
- 1 (15-oz.) can pinto beans, drained and rinsed
- 1/2 cup (2 oz.) shredded Parmesan cheese $
- Serve with: Corn chip scoops, red bell pepper strips, pretzel rods
Strawberry Cupcakes

Preheat the oven to 350 degrees
- Strawberry Cream Cheese Icing:
- 1 cup unsalted butter, softened
- 2 cups sugar
- 1 (3 ounce) package strawberry flavored Jell-O®
- 4 eggs, room temperature
- 2 3/4 cups sifted cake flour
- 2 1/2 teaspoons baking powder
- 1 cup whole milk, room temperature
- 1 tablespoon vanilla extract
- 1/2 cup fresh strawberry puree
- Fresh strawberries, sliced for garnish
- 16 ounces cream cheese, softened room temperature
- 2 sticks unsalted butter, softened at room temperature
- 4 cups sifted powder sugar
- 3 teaspoons strawberry extract
GRILLED TILAPIA

Place the fish in a large nonmetal dish
- 6 (6-ounce) tilapia fillets
- 6 tablespoons olive oil, plus additional for brushing
- 1 tablespoon grated orange zest
- 6 tablespoons freshly squeezed orange juice
- 1 tablespoon grated fresh ginger
- 1 teaspoon hot sauce, to taste
- 1 teaspoon salt
- Freshly ground black pepper

Crab Canapes

Preheat oven to 400 degrees F
- 6 ounces imitation crabmeat
- 1 tablespoon thinly sliced green onion
- 1 cup shredded Swiss cheese
- 1/2 cup mayonnaise
- 1/4 teaspoon curry powder
- 1/2 teaspoon salt
- 1 teaspoon lemon juice
- 1 (8 ounce) can refrigerated dinner roll dough
SUMMER SALAD

Place your fresh spinach in a clear bowl then arrange the rest on top to look pretty
- Fresh Spinach-1 bag
- Avocado-1 med
- Cucumber-1/2 Lg. Cut in 15 thin slices
- Strawberries -7 med. Cut in 1/4ths
- Cantaloupe- 12 cantaloupe balls
- Slivered Almonds- toss a few on top
- Mint -3 or 4 sprigs (optional)
Pepperoni Stromboli

1 Prepare dough as directed on package
- 2 (6 1/2 ounce) packages pizza dough mix (I use Martha White)
- 2 egg yolks, reserve egg whites for later
- 1 tablespoon parmesan cheese
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 tablespoons oil
- 1/2 lb pepperoni
- 1/2 lb mozzarella cheese
Chicken with White Wine and Tarragon

To get things started, heat the oil over high heat in a dutch oven
- 1/4 cup vegetable oil
- 4 1/2 lbs of chicken legs with the skin still on
- kosher salt and fresh black pepper to taste
- flour for dusting + two tablespoons reserved for the sauce
- 1 1/2 cups pearl onions, trimmed and peeled
- 4 cloves garlic, halved
- 1 cup white wine
- 3 cups low-sodium chicken broth plus 1/3 cup to the side
- 1/2 cup chopped fresh tarragon leaves plus 2 tablespoons to the side
- 2 tablespoons unsalted butter
