Salt Rising Bread

- 1/2 cup milk
- 1/2 cup cream
- 1/3 cup white cornmeal
- 2 Tbsp sugar
- 1 1/2 tsp salt
- 1 cup lukewarm water
- 4 1/2 cups all purpose or unbleached white flour, sifted
- 2 Tbsp shortening or lard, room temperature.
Grilled Pepper Poppers

- 1/2 cup (4 ounces) soft goat cheese
- 1/2 cup (4 ounces) fat-free cream cheese, softened
- 1/2 cup (2 ounces) grated fresh Parmesan cheese $

- 2 tablespoons thinly sliced green onions $

BLT Pasta Salad

- 12 ounces corkscrew-shaped pasta
- 1/2 cup milk
- 12 ounces lean bacon
- 3 medium ripe tomatoes, cut into chunks
- 1 tablespoon chopped fresh thyme
- 1 clove garlic, minced
- Kosher salt and freshly ground pepper
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 4 tablespoons chopped chives or scallion greens
- 5 heads Bibb lettuce, quartered, or 5 cups chopped romaine hearts

- 12 ounces mild bulk sausage
- 12 ounces hot bulk sausage
- 10 eggs, lightly beaten
- 1 cup sour cream
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 zucchini, chopped
- 16 ounces mushrooms, sliced
- 2 cups cubed American cheese
Pesto, Mozzarella & Egg Breakfast Sandwich

Toast English muffin. Combine egg and roasted red pepper in a small (about 8-ounce) microwave-safe ramekin or bowl
- 1 whole-wheat English muffin
- 1 large egg, lightly beaten
- 3 tablespoons chopped roasted red pepper

- 1 thin slice fresh mozzarella cheese
Chili Rice

1. Heat oil in a medium-size stockpot over medium heat
- 3 tablespoons canola oil
- 1 red onion, finely chopped
- 1 green pepper, finely chopped
- 1 red bell pepper, finely chopped
- 1 jalapeno, seeded and minced
- 1 cup chopped plum tomatoes
- 2 tablespoons minced garlic
- 3/4 pound ground beef or turkey
- 2 cups long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup rinsed and drained kidney beans (from a 15.5-ounce can)
- 1 tablespoon chili powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 1/2 cups water
- 3 tablespoons chopped scallions for garnish
Homemade Tomato Sauce

In a Dutch oven heat the oil and cook the onions until soft about 5 minutes
- 1/2 cup olive oil
- 1 small onion (about 2 cups), finely diced
- 5 cloves garlic, minced
- 1 large carrot, grated
- Salt
- Pepper
- 2 (28-ounce) cans whole peeled tomatoes, juices reserved
- 1 bay leaf
- 2 tablespoons basil, chopped
