Ham & Egg Crepe Squares

Perfect little squared packages of ham and egg wrapped up in a soft crepe make for an awesome breakfast or brunch t
- 1 cup flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 4 large eggs
- 3 tablespoons melted butter
- 9 thin slices ham
- 9 eggs
- Chopped fresh parsley
Baked Lima Beans

Bake 1 1/2 hours in 350 degree oven
- 1 lb. lima beans - soaked overnight and cooked for 1/2 hours.
- Minced onion to taste
- 4 slices bacon
- 4 cans tomato juice
- 1/2 c. brown sugar
Lemon-Roasted Asparagus

Heat oven to 400. In large bowl, combine asparagus and onion wedges; toss with olive oil
- 1 1/2 lbs. asparagus, trimmed
- 1 med. red onion, peeled and cut into thin wedges
- 3 Tbsp. olive oil
- 1 lemon, rind chopped fine and juice
- 1 Tbsp. chopped fresh parsley
Avocado Spread

- 1 c. mashed ripe avacado
- 1 tsp. minced onion
- 1 12/2 tsp. lemon or lime juice
- Several drops tobasco sauce
- Salt and pepper
Coconut Pecan Fingers

Mix and roll into finger shape
- 1/2 c. butter
- 1/4 c. powdered sugar
- 1 c. flour
- 1 tsp. vanilla
- 1/2 c. chopped pecans
- 1/2 c. coconut
Baked Celery

Saute mushrooms in butter for 5 mins
- 1/2 lb. mushrooms, sliced
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. milk
- 3 c. celery, cut in 1-inch pieces, cooked
- 1/2 c. grated sharp cheddar cheese
Tater-Tot Casserole

Preheat oven to 375 degrees
- 1 lb lean ground beef
- 1/2 medium onion, chopped
- 1 (10 1/2 ounce) can condensed cream of celery or cream of chicken soup (undiluted)
- 1 16oz package frozen tater tots
- 1 cup shredded cheddar cheese
- salt & pepper
Corn Souffle

- 2 c. canned corn
- 1 Tbsp. butter
- 2 Tbsp. flour
- 2 eggs
- 1 c. milk
- 1/4 tsp. salt
- pepper
Welsch Rarebit

- 1 Tbsp. butter
- 1 tsp. cornstarch
- 1/4 c. thin cream or milk
- 1/2 lb. soft mild cheese, cut in small pieces
- 1/4 tsp. salt
- 1/4 tsp. dry mustard or pepper
