Great Pumpkin Cake with Cinnamon Glaze

This moist and spicy cake makes a beautiful not-too-sweet dessert or a delicious breakfast treat
- CAKE
- 4 cups cake flour (not self-rising)
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
- 2 1/2 cups granulated sugar
- 4 large eggs
- 1 cup buttermilk
- 1 can (15 ounces) pumpkin puree (not pumpkin pie mix)
- 1 tablespoon vanilla extract
- GLAZE
- 1 cup confectioners' sugar
- 1/2 teaspoon ground cinnamon
- 2 to 4 tablespoons heavy cream or half-and-half
Chicken with Honey Mustard Glaze

In a small bowl, stir the cornstarch, broth, honey and mustard until the mixture is smooth
- 2 Tbsp. cornstarch
- 1 3/4 cups chicken broth or chicken stock
- 1 Tbsp. honey
- 1 Tbsp. Dijon-style mustard
- 2 Tbsp. vegetable oil
- 1 1/4 lbs. skinless boneless chicken breast halves
- 1 lg. carrot cut into 2" matchstick thin strips, about 1 cup
- 1 med. onion, sliced. about 1/2 cup
- 1 cup regular long grain white rice, prepared.
Parmesan Potato au Gratin

Preheat oven to 400 degrees
- 2 garlic cloves, finely chopped
- 2 tablespoons onion or shallot, finely chopped
- 2 cups half and half
- 1 cup parmesan, grated
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon thyme {fresh}, chopped
- 2-3 medium russet potatoes, sliced thinly
Steak Marinade

Combine all ingredients. Pour over two 1 1/2 " thick porterhouse steaks
- 1/2 cup soy sauce
- 2 Tbsp. brown sugar
- 2 Tbsp. sesame oil
- 2 cloves garlic, crushed
- 1 tsp. ginger powder
Easy Chicken Stock

Place all ingredients in stockpot, add 12 cups of water and bring to a boil
- rotisserie chicken carcass, or small fryer
- 1 rib chopped celery
- 2 chopped carrots
- 1 chopped onion
- 2 chopped leeks
- peeled garlic cloves --optional
Oven Cheese Fondue

Heat oven to 325 degrees. Remove crusts from bread, cut bread into cubes
- 10 slices white bread
- 6 eggs
- 3 cups milk
- 2 Tbsp. snipped parsley
- 1 tsp. dry mustard
- 1 tsp. salt
- 2 cups shredded process sharp American cheese--about 8 ounces
- 3 Tbsp. finely chopped onion
