Chicken with balsamic tomatoes

Cook pasta according to package directions, omitting salt
- 8 ounces dry multigrain penne pasta, uncooked
- 2 tablespoons Pure Wesson® Canola Oil
- 4 boneless, skinless chicken breasts
- 1/2 tsp. garlic salt
- 1/4 tsp. ground black pepper
- 1 cup sliced onion
- 1 can Hunt's diced tomatoes with Basil, Garlic and Oregano, undrained
- 1/2 cup balsamic vinegar
Balsamic Chicken

Coat a large sauté pan with oil and preheat the pan over med-high heat
- 1 Tbsp. olive oil
- 1 yellow onion, thinly sliced
- 2 lg. red bell peppers, sliced
- 4 cloves garlic, minced, or 1 tsp. garlic powder
- 1/4 tsp. red pepper flakes--to taste
- 1/4 tsp. coarse salt
- 1/4 tsp. ground black pepper
- 1/3 cup balsamic vinegar
- 1 15oz can, diced tomatoes, well drained.
Brisket

Brown brisket in dutch oven Mix coke, chili sauce & onion soup
- 2 1/2 - 3 lbs. brisket
- 1 cup coke
- 1 bottle chili sauce
- 1 pkg. Lipton Onion soup
Mushroom-Barley Soup

In a lg. saucepan combine the beef stock with all ingredients
- 6 c. beef stock
- 1 Carrot, thinly sliced
- 1 Celery rib, thinly sliced
- 1 small onion, finely chopped
- 3/4 lb. cremini or white button mushrooms, thinly sliced
- 1/2 c. barley
- salt and pepper to taste
- flat-leaf parsley for garnish
- Cubed stew beef--optional
Mussels with tomato and white wine

Rinse and scrub mussels under cold water
- 3 lbs mussels
- 2 Tbsp. extra-virgin olive oil
- 1 yellow onion, thinly sliced
- 4 cloves garlic, minced
- 1/2 tsp. kosher salt
- 1/4 tsp. red pepper flakes
- 1/4 tsp. dried oregano
- 1 cup crushed canned tomatoes
- 1/2 cup dry white wine
- handful fresh parsley, chopped

- 3 cups white or chocolate chips.
- 2 cups assorted chopped candy, mini cookies and sprinkles.
Rustic Italian Bread

Place all ingredients into bread machine, except cornmeal and egg,according to manufacturers directions
- 1 c. warm water..110 degrees
- 2 Tbsp. olive oil
- 3 c. Bread flour
- 2 Tsp. sugar
- 1/2 tsp. salt
- 1 pkg. yeast.
- cornmeal
- 1 egg white, beaten
Miso-smothered chicken

Takes a little while to prepare, but, so worth it
- 1/2 cup flour
- 1 tsp. kosher salt
- 1 tsp. cayenne pepper
- 1 tsp garlic powder
- 4 bone-in skin on chicken thighs. ( used boneless, skinless)
- 2 Tbsp. vegetable or canola oil
- 2 cujps chopped yellow onions
- 1 Tbsp. minced garlic
- 1/3 c. bourbon
- 2 cups chicken stock
- 1/2 cup orange juice
- 2 Tbsp. soy sauce
- 1 Tbsp. dark miso (I used white miso)
- 8 ounces shitake mushrooms, stems discarded, thinly sliced
- cooked rice, to serve
Campaign Spirit Chicken

In a 10" skillet, melt butter
- 2 Tbsp. butter
- 2 chicken breasts, halved lengthwise
- 1/21 lb. small whole mushrooms, halved
- 2/3 c. champagne or dry white wine
- 1/4 tsp. salt
- 1/4 tsp. dried tarragon, crushed
- 1/8 tsp. pepper
- 1/4 c. light cream or milk. (I use fat-free half and half)
- 1 Tbsp. cornstarch
