INSTRUCTIONS 1. In 12-inch nonstick skillet, heat oil over medium-high heat

- 1 Tbsp. olive or vegetable oil
- 1 1/4 lb. boneless skinless chicken breasts, cut into 1/4-inch pieces

- 1 medium red bell pepper, chopped (1 cup)
- 1 can (15 oz.) Progresso® black beans, drained, rinsed
- 1 can (7 oz.) Green Giant® Niblets® whole kernel sweet corn, drained
- 2 cups shredded Mexican cheese blend (8 oz.)
- 6 oz. tortilla chips (about 42 chips)
- 1/4 cup chopped fresh cilantro
Herb Vinaigrette

Combine vinegar, shallot, mayo, mustard, salt and pepper to taste in small nonreactive bowl
- 1 Tbsp. champagne vinegar, or red wine vinegar or fresh squeezed lemon juice.
- 1 1/2 tsp. very finely minced shallot
- 1/2 tsp. mayonnaise
- 1/2 tsp. Dijon mustard
- 1/8 tsp. table salt
- a few grinds of ground black pepper
- 3 Tbsp. extra-virgin olive oil
- 1/2 tsp. minced fresh tarragon, marjoram or oregano.
Fabulous Fast Shrimp

Heat butter in a 10" skillet
- 1 Tbsp. butter
- 2 stalks celery, chopped...about 1 cup
- 1/4 c. chopped green pepper
- 2 green onions, sliced. about 1/4 cup
- 1 lb. fresh lg. shrimp, shelled and deveined
- 1 can Cream of Chicken soup
- 1/2 c. water
- dash cayenne pepper
- hot cooked rice

Baked Italian Chicken (Heloise)

- 1 cut-up chicken, or parts that you want.
- 1 8 ounce bottle nonfat, (or regular) Italian salad dressing
- 1 medium onion, peeled and sliced
- 4 medium potatoes, sliced, peeled or not, into bite size pieces

- 1/2 1/2 head 1/2 medium head cauliflower
- 2/3 2/3 2/3 cup shredded cheddar cheese
- 1/4 1/4 1/4 cup parmesan cheese
- 1/4 1/4 1/4 cup flour
- 2 2 2 large eggs
- 1/2 1/2 1/2 tsp. salt
- 1/2 1/2 1/2 tsp. red pepper flakes.
Artichoke Dip

- 1/4 c. parmesan cheese
- 1/2 c. mayonnaise
- 1-2 tsp garlic powder
Leftover Mashed Potato Pancakes
