Heat oven to 400°F. Grease large dark or nonstick cookie sheet with shortening or cooking spray; set aside
- 2 teaspoons olive oil
- 3 cups cherry tomatoes, halved

Cook potato in boiling water 10 minutes or until tender; drain
- 4 cups cubed peeled baking potato (about 1 1/4 pounds)
- 1 tablespoon canola oil
- 1 teaspoon cumin seeds
- 1/2 cup finely chopped red onion

- 1/2 teaspoon ground coriander

- 2 Tbl. grated Parmesan cheese
- 1 Tbl. olive oil or melted butter
- 1/2 tsp. garlic powder
- 1 tsp. dried Italian seasoning
