1.Preheat oven to 350° 2
- 2 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 3 ripe bananas
- 1/2 cup butter, room temperature
- 2 cups granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup milk
- Crumb Filling and topping
- 1 cup cold butter, cubed
- 2 cups light brown sugar
- 2 cups flour
- optional glaze
- 1 cup powdered sugar
- 1-2 Tbsp milk
Chickpea and Hearts of Palm Salad

Combine the first 5 ingredients in a medium bowl
- 1 cup drained canned chickpeas (garbanzo beans)
- 1/2 cup chopped plum tomato
- 1/3 cup (about 1 1/2 ounces) diced provolone cheese
- 1/4 cup finely chopped red onion
- 1 (14-ounce) can hearts of palm, drained and cut crosswise into 1/2-inch slices
- 1 tablespoon minced fresh parsley
- 2 tablespoons red wine vinegar
- 1 teaspoon olive oil
Deviled Eggs

eggs can be assembled (but not garnished) 2 hours ahead and chilled, covered
- 12 large eggs
- 1/2 cup mayo
- 2 tsp brown or yellow mustard
- 1/4 cup finely chopped sweet pickles
- 1/4 cup finely chopped celery
- GArnish: finely chopped pimento stuffed olives, paprika
Make-Ahead Mashed Potatoes

1.Place potatoes in a large pot and fill with water
- 5 pounds of russet potatoes, peeled and cut into 2 inch chunks
- 12 tablespoons of butter (1 1/2 sticks)
- 1 teaspoon of kosher salt
- 1/2 teaspoon of white pepper
- 8 oz of softened cream cheese
- 1 cup of half and half, heated
World's Best Prime Rib

Remove the steaks from the refrigerator and allow them to come to room temperature
- 3 USDA Prime rib-eye steaks, each about 2 1/2 pounds and 1 3/4 to 2-inches thick
- Salt and freshly ground black pepper
- 2 heads garlic, cloves peeled
- 6 tablespoons extra-virgin olive oil, divided
- 2 sprigs rosemary
- 2 lemons

Heat a pan over a medium heat and melt the butter or ghee
- 3 tbsp garlic, minced;
- 2 tbsp lemon juice;
- 3/4 cup butter (or Ghee);
- 2 pounds large scallops;
- Salt and pepper to taste.
Slow Cooker French Dip Sandwiches

Season roast with salt and pepper and place in slow cooker
- 1 (3-4 lb.) beef roast (chuck or rump roasts shred well)
- 1 envelope onion soup mix
- 1 envelope Au Jus gravy mix
- 4 cups low sodium beef broth
- 8 crusty sub buns
- 8 slices Provolone or Swiss cheese

TO MAKE THE CHICKEN BAKED ZITI: Preheat oven to 375 degrees F
- CHICKEN BAKED ZITI INGREDIENTS:
- 12 ounces ziti (or any pasta shape)
- 2 cups shredded, cooked chicken (about 2 small chicken breasts)
- 1 batch alfredo sauce (see below)
- 1 1/2 cups shredded mozzarella cheese (I used 2% low fat)
- (optional toppings: additional shredded Parmesan cheese, chopped fresh parsley)
- ALFREDO SAUCE INGREDIENTS:
- 1 Tbsp. olive oil
- 4 cloves garlic, minced
- 3 Tbsp. flour
- 1 cup chicken broth
- 1 cup low-fat milk (I used 1%)
- 3/4 cup freshly-grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
