Romaine with Creamy Italian Dressing

whisk together all ingredients except lettuce
- 1/4 cup extra virgin olive oil
- 2 tbsp. white wine vinegar
- 2 tbsp. heavy cream
- 1 tbsp. mayo
- 1 tbsp. parm, grated
- 1 1/2 tsp chopped fresh parsley
- 1 1/2 tsp honey
- 1/4 tsp garlic, minced
- 1/4 tsp kosher salt
- 1/4 tsp Dijon mustard
- 1/8 tsp red pepper flakes
- 6 cups torn romaine lettuce
Potato and Blue Cheese Gratin

Put oven rack in upper third of oven and preheat oven to 425°F
- 1 1/2 lb medium yellow-fleshed potatoes
- 1 cup heavy cream
- 1 garlic clove, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup crumbled blue cheese (1 oz)
- Special equipment: an adjustable-blade slicer; a 10-inch heavy skillet with a flameproof handle
Grandma's Tomato Sauce

Sauce can be chilled up to 5 days or frozen 6 months
- 1 tablespoon salt
- 1 tablespoon sugar (optional)
- 10 lb plum tomatoes, halved lengthwise, cored, and coarsely chopped (24 cups)
- 6 garlic cloves, peeled and lightly smashed
- 1 cup extra-virgin olive oil
- 1 cup loosely packed fresh basil leaves
Daube Provençale (French Beef Stew with Red Wine)

1.Season meat with salt and pepper on all sides
- 3 lb stew beef, cut into 1 inch cubes
- 1 (750-ml) bottle Cote du Rhone [I used Bordeaux and it was fine, but Yvette recommends Cote du Rhone, Vacqueyras, Gigondas, or Minervois]
- salt and freshly ground black pepper
- 3 sprigs fresh thyme
- 2 bay leaves
- 3 carrots, peeled and cut into 1/2 inch slices
- 1 orange, washed well and cut into 8 wedges [I substituted grapefruit]
- 1 large onion, peeled and cut into rings
- 2 cloves garlic, peeled and sliced
- olive oil
- 1 6-oz can tomato paste
- 3 1/2 oz. pitted black olives
- Garlic Mashed Potatoes
- Serves 6-8.

- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon chopped fresh rosemary leaves
- 2 small zucchini, cut in 1/2 lengthwise (about 1-inch wide by 5 inches long)

- 1/4 cup grated Parmesan
