Grilled Eggplant with Fresh Mozzarella, Tomatoes and Basil Vinaigrette

1.Slice your eggplants into ¾ inch rounds
- For the basil vinaigrette:
- 2 large eggplants, sliced into 3/4-inch rounds
- Salt
- 1/4 cup plus 1/2 teaspoon extra virgin olive oil
- 1 large tomato, seeded and diced (I used an heirloom tomato because they’re awesome, but any old tomato will do)
- 8 ounce fresh mozzarella (1 average ball), sliced into 1/4-inch rounds
- 1/3 cup fresh basil, packed
- 2 cloves garlic, peeled
- 2 1/2 tablespoons red wine vinegar
- 5 tablespoons extra virgin olive oil
- Salt to taste
- Fresh ground pepper to taste

Place the butter, garlic, and Italian seasoning in a microwave-safe dish and heat until melted
- 1 stick (1/2 cup) butter
- 4-5 cloves garlic, minced or pressed

- INGREDIENTS
- 1½ pounds potatoes
- 1 small yellow onion
- 1 cup parmesan cheese, grated
- 2 tablespoons chives, minced
- 2 tablespoons garlic herb seasoning

- 1 package of pork tenderloins (2 tenderloins total about 2-2.5lbs)
- 4 garlic cloves, quartered/sliced/slivered
- 1/4 cup soy sauce
- 2 tablespoon country dijon mustard (whole grain mustard)
- 4 tablespoon honey
- 2 tablespoon fresh orange juice
- 1 tablespoon finely chopped fresh rosemary or Herbs de Provence
- freshly ground pepper, to taste
- 3 tablespoon olive oil
