Bacon Wrapped Beef Tenderloin

Season the tenderloin all over with the salt, pepper, and garlic
- 1 (5.5 lbs.) beef tenderloin, trimmed and tied
- 1 rounded tbs. kosher salt
- Fresh ground black pepper
- 6 garlic cloves, minced
- 15 slices of bacon
- 1/2 cup creme fraiche
- 2 tbs.white horseradish
- Several dashes of Tabasco
Best Ever Beef Stew

Shake the beef stew meat in a resealable plastic bag with the flour & seasoning salt until evenly coated
- Ingredients
- 2 pounds beef stew meat
- 1/2 cup all purpose flour
- 1 tablespoon seasoning salt
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 1 large onion, diced
- 2 bay leaves
- 1/4 cup Worcestershire sauce
- 2 cups water
- 2 heaping teaspoons beef demi-glace (or beef Swanson Flavor Boost)
- 4 medium to large red skinned potatoes, washed & diced
- 3 large carrots, peeled & sliced
- 1 stalk celery, diced
Famous Japanese Restaurant-Style Salad Dressing

Yields: 1-3 servings
- 1/2 cup minced onion
- 1/2 cup peanut oil
- 1/3 cup rice wine vinegar
- 2 tablespoons water
- 2 tablespoons minced fresh ginger root
- 2 tablespoons minced celery
- 2 tablespoons ketchup
- 4 teaspoons soy sauce
- 2 teaspoons white sugar
- 2 teaspoons lemon juice
- 1/2 teaspoon minced garlic

DIRECTIONS Preheat oven to 375º
- 1 lb. elbow pasta
- 1/4 c. butter
- 1 shallot, finely diced
- 3 cloves garlic, minced
- 1/4 c. all-purpose flour
- 2 c. milk
- kosher salt

- 1 c. shredded white Cheddar
- 1 c. shredded mozzarella

Instructions Lower oven rack to middle lower position and preheat oven to 450 degrees
- 2 1 pound pork tenderloins, trimmed
- 1/4 cup hoisin sauce
- 1 pound green beans, stems trimmed
- 1 1/2 pounds baby potatoes cut in half lengthwise
- 3 tablespoons olive oil

Salmon Cakes with Honey Mustard Vinaigrette

Poach the salmon: In a shallow skillet or saute pan, bring the water and juice of a lemon to a boil
- For the vinaigrette:
- 1 lb. salmon, skin removed
- 1 cup water
- 1/2 lemon, juice and zest
- 1 1/3 rd cup panko breadcrumbs*
- 1 1/2 TBSP all purpose flour
- 1/2 red bell pepper, diced small
- 1 small shallot, chopped fine
- 1/2 cup loosely packed fresh parsley, chopped
- 2 tsp. whole fennel seeds, chopped
- 1/2 tsp. kosher salt (or 1/4 tsp. sea salt)
- 1/8 th tsp. cayenne pepper (optional)
- 1 large egg, slightly beaten
- 2 TBSP dijon mustard
- Olive oil, for the pan
- 1/4 cup brown rice vinegar
- 1/8 th cup tarragon vinegar
- 1 TBSP raspberry vinegar (see notes)
- 2-3 TBSP honey, to taste
- 1-2 TBSP dijon mustard, to taste
- 1/2-3/4 cup good quality extra virgin olive oil
- For serving:
- Mixed greens
- Fresh sliced avocado
- Any other veggies you like
