Mexican Cheesecake

Combine tortilla chips and butter, and press into bottom of a lightly greased 9 inch springform pan
- 1 cup crushed tortilla chips
- 2 Tbsp. melted butter
- 3 (8-oz.) packages cream cheese, softened
- 1 cup ricotta cheese
- 4 eggs
- 10 oz. grated Cheddar cheese
- 1 (4.5-oz.) can chopped green chiles
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper
- 1 cup sour cream
- 1/2 cup salsa or picante sauce
Ribeye Steaks With Blue Cheese Sauce

Heat the butter and oil together in a heavy skillet over high heat
- 2 Tbsp. unslated butter
- 1 swirl of olive oil
- 4 Ribeye steaks, about 2 inches thick
- coarse sea salt
- fresh ground pepper
- 1/3 cup finely diced shallots or red onions
- 1 large clove of garlic, minced
- 1/4 cup Sparkling or white wine
- 1/2 cup beef stock
- 5-6 sprigs of fresh thyme, leaves stripped from sprigs
- 1/2 cup heavy cream
- 1/4 to 1/2 cup crumbled blue cheese (according to taste)
- sprigs of thyme for garnish
- Pre-heated 375F oven
Apple Brie & Arugula Grilled Cheese

in a blender or a food processor, combine the blue cheese, walnuts, honey and hot sauce until smooth
- 1/4 cup blue cheese
- 1/4 cup walnuts
- 1/4 cup honey
- 1 tbsp Sriracha hot sauce
- 4 slices sourdough bread
- 4 oz brie, rind removed
- 1 green apple cored and thinly sliced
- 1/2 cup arugula, roughly chopped, divided
- 4 tbsp butter, divided
THE BEST CHICKEN DIPPING SAUCE

Instructions In a medium bowl whisk all ingredients together
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon dijon mustard
- 2 1/2 tablespoons honey
- 2 tablespoons BBQ sauce ( I always use Sweet Baby Rays)

- Ingredients
- 1 box Swiss chocolate cake mix
- 1 small box instant vanilla pudding
- 3 eggs
- 1 1/2 cups milk
- 3/4 cup oil
- Baking spray with flour
- Frosting
- 1 (8-ounce) package cream cheese
- 1 cup sugar
- 1 (12-ounce) container Cool Whip
- 2 large Hershey bars, grated
- 1 cup pecans, finely chopped
Creamy Italian Potato Salad

Cook potatoes in boiling salted water until just tender
- 3 pounds red potatoes, cubed
- 2/3 cup grated Parmesan cheese
- 1 cup (9 ounces) ricotta cheese
- 4 garlic cloves, minced
- 1/2 medium red onion, sliced in thin rings
- 1/2 cup olive oil
- 6 tablespoons cider vinegar
- Salt to taste
- Coarsely ground pepper
- 1/2 cup minced fresh parsley
- 1/2 teaspoon dried oregano

- 4 cups confectioners’ sugar
- 5 tablespoons milk

Noodles with Shrimp & Snow Peas

heat a 10 inch skillet over high
- 5 medium peel, deveined raw shrimp (about 2 1/2 oz)
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
- 3 tbsp canola oil, divided
- 1/3 cup fresh snow peas, or sugar snap peas (about 8 to 10 pods)\
- 1 slice yellow onion (1/3 inch thick), quartered
- 1/2 garlic clove, finely chopped
- 1 tbsp curry powder
- 3 oz rice vermicelli noodles, soaked in cold water until softened
- 1 tbsp fish sauce
- 1 tbsp sliced scallions
BAKED OATMEAL

- 3 cups old fashioned rolled oats
- ¾ cup brown sugar
- 1 ½ tsp baking powder
- ¾ tsp ground cinnamon (I double this if making plain or banana-nut flavor)
- ½ tsp salt
- Wet ingredients:
- 2 eggs, lightly beaten
- 2 ½ cups milk, plus additional milk for serving
- 1 tsp pure vanilla extract
- 4 tbsp unsalted butter or coconut oil, melted
- 2 cups fresh berries (larger berries chopped)
