Chinese Chicken Wings

Cut chicken wings at joint, discarding tips
- 20 chicken wings, about 4 pounds
- 1/2 cup soy sauce
- 1/2 cup lemon juice
- 1/2 cup molasses
- 2 garlic cloves, crushed
- 3 tbsp olive oil
Koosa - Stuffed Lebanese Squash

This recipe comes from a very old cookbook, from the Lebanese Church Ladies' Guild, from Cleveland, OH
- 12 Lebanese green squash or zucchini, 4-5 inches long
- 1 1/2 lb ground lamb or beef or mix
- 1 1/2 cup rice
- 1 12oz can tomatoes
- 1 8 oz can tomato sauce
- salt and pepper to taste
- dash of cinnamon
- 1 1/2 cup water
- 1/8 tsp garlic powder
- crushed, dried mint to taste (optional)
Fried Potato Balls

You can "fill" the potato balls with a variety of mixtures, that can include cooked meat and/or veggies
- 4 potatoes, med size, (total 2 cups of hot riced potatoes)
- 2 Tbsp butter
- 1/2 cup grated cheese
- 1/2 tsp salt
- pinch cayenne
- 2 Tbsp cream
- 2 beaten egg yolks
- 1/2 tsp baking powder
- (flour, 1 beaten egg w/2 Tbsp water and fine bread crumbs - for frying)
Brussel Sprouts Slaw

The ingredient amounts will make a Large slaw
- Dressing:
- 2 pounds brussels sprouts, shredded on a mandolin, box grater or food processor
- 1 1/2 cups cranberries
- 3 shallots, diced
- 4 medium apples, cored, peeled and diced
- 2 cups carrots, shredded on a mandolin, box grater or food processor, OR chopped fine
- 20 juniper berries, crushed/ground
- 1 cup EVOO
- 9 Tbsp Apple Cider Vinegar
- 2 Tbsp dijon mustard
- 2 garlic cloves, crushed
- 1/2 tsp salt
- 2 Tbsp brown rice syrup (you can use agave or honey)
Biscuits - Southern Style

This is a very old southern family recipe
- 5 cups self rising flour
- 2 1/2 cup water
- 2 1/2 cup buttermilk
- 1/2 tsp baking soda
- 2 spatulas shortening
- Oil for cookie sheets
Spicy Mayonnaise

This is a Japanese Spicy Mayonnaise, which is very popular with Sushi
- 1 cup mayonnaise
- 3 tsp garlic chili sauce OR Gochujang (Go real spicy with 2-3 Tablespoons)
- 2 tsp sriracha chili sauce (Go real spicy with 1 1/2 Tablespoons)
- 1/4 tsp cayenne pepper
- 1 Tbsp fresh lime juice
- pinch of salt
Creamy Tomato Soup

1. In a saucepan melt the butter and add onion and garlic
- 1 Tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 potato, peeled and thinly sliced
- 1 lb tomatoes, roughly chopped
- 1 bay leaf
- 2 Tbsp tomato paste
- 4 cups vegetable stock
- salt and freshly ground pepper
- 1/2 cup creme fraiche
- 1 Tbsp finely chopped fresh parsley
Creamy Caesar Dressing

If your egg yolk is not room temperature, then it will not incorporate well into the dressing
- 1 egg yolk -MUST be room temperature
- 2 tsp apple cider vinegar
- 1/3 cup olive oil
- 1/2 tsp mustard or mustard powder
- 1 Tbsp lemon juice
- 2 garlic cloves, finely crushed
- 2 Tbsp parmesan cheese
- 2 tsp anchovy paste OR 2 tsp worcestershire sauce
- Salt, pepper and spices to taste
Maple Kabocha Cake

1. Preheat the oven to 375 degrees
- 1 kabocha squash (2 lbs)
- 1/2 cup raisins
- 3/4 cup dry sherry
- 2 cups flour
- 2 tsp baking powder
- 3/8 tsp salt
- 1 stick unsalted butter, room temp
- 3/4 cup dark brown sugar, packed
- 3/4 cup dark maple syrup
- 1 1/2 tsp vanilla extract
- 3 eggs, room temp
- confectioner's sugar, for dusting
Indian Cauliflower and Potatoes - Gobi Aloo

1. Heat the oil in a medium skillet over medium heat
- 1 Tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp minced garlic
- 1 tsp ginger paste
- 2 medium potatoes, peeled and cubed
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp garam masala
- salt to taste
- 1 lb cauliflower, cut into florets
- 1 tsp chopped fresh cilantro
