Creamy Tomato Soup

Ingredients
- 1 Tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 potato, peeled and thinly sliced
- 1 lb tomatoes, roughly chopped
- 1 bay leaf
- 2 Tbsp tomato paste
- 4 cups vegetable stock
- salt and freshly ground pepper
- 1/2 cup creme fraiche
- 1 Tbsp finely chopped fresh parsley

Preparation
Step 1
1. In a saucepan melt the butter and add onion and garlic. Cook over gentle heat until soft. Add the potato, tomatoes, bay leaf, tomato paste and stock. Bring to a boil and simmer, covered, for about 20 minutes, until potato is tender
2. Blend/Puree contents of pan until smooth. Return to saucepan and gently reheat. Stir in creme fruit. Ladle into bowls and garnish with chopped parsley.
