Buttermilk Vinaigrette

This dressing is good over a simple tomato and chive salad
- 3/4 cup buttermilk
- 1/4 cup fresh tarragon, minced
- 1/4 cup white wine vinegar
- 3 Tbsp olive oil
- 1 1/2 tsp sugar OR brown rice syrup OR honey
- 1/2 tsp ground mustard
- 1/4 tsp celery salt
- 1/4 tsp pepper
Chocolate Rum Mousse

1. Put the chocolate in a heatproof bowl
- 9 oz good-quality semisweet chocolate, chopped
- 3 eggs
- 1/4 cup superfine sugar
- 2 tsp dark rum
- 1 cup heavy cream
- heavy cream, extra, to serve
- semisweet chocolate, extra, grated, to garnish
Roasted Cauliflower Salad with Lentils and Dates

1. Preheat the oven to 350 degrees
- 1/2 cup raw almonds
- 1 cup beluga or green lentils, rinsed
- 1 head of cauliflower, cut into 1 to 1 1/2 inch florets
- 1/4 cup plus 1 Tbsp extra virgin olive oil
- 1/4 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- pinch of cayenne
- kosher salt and fresh ground pepper
- 2 Tbsp tahini
- 3 Tbsp fresh lemon juice
- 1 tsp honey
- 10 dates, pitted and chopped
- 1/2 small red onion, sliced
- 4 cups loosely packed spinach or arugula
Pork Stock

- 2 ham hocks
- 1 1/2 lbs. pork bones
- 1 inch piece of fresh ginger, peeled

Lamb Kebabs with Pomegranate Glaze

- 1 pound ground lamb
- 3 quarter size slices of ginger
- 2 large garlic cloves
- 2 medium shallots
- zest of 1 lemon and its juice
- 4 sprigs fresh mint
- handful fresh cilantro
- 3/4 tsp kosher salt
- 4 tbsp pomegranate molasses
- 1/2 tsp baking soda
- 1/4 tsp garam masala
- fresh ground pepper
- 8 bamboo or metal skewers
- oil for drizzle
Black Forest Chocolate Cheesecake

This is a VERY rich cheesecake
- Cocoa Crumb Crust:
- 1 1/4 cup graham cracker crumbs
- 1/4 cup cocoa
- 1/4 cup sugar
- 1/2 cup butter, melted
- Filling:
- 2 8oz pkg cream cheese, room temp
- 1 cup sour cream
- 1 1/4 cup sugar
- 1/2 cup Cocoa
- 3 eggs, room temp
- 2 tsp almond extract
- 1 21oz can cherry pie filling, chilled
- Topping:
- 1 cup cold whipping cream
- 1/4 cup powder sugar
- 1/2 tsp almond extract
Zucchini Silky Soup

1. In a large saucepan, melt the butter in the olive oil
- 1 Tbsp unsalted butter
- 2 Tbsp extra virgin olive oil
- 1 small onion, finely chopped
- 1 garlic clove, thinly sliced
- Salt and pepper to taste
- 1 1/2 lbs zucchini, halved lengthwise and sliced 1/4 inch thick
- 2/3 cup vegetable stock or low sodium broth
- Raw zucchini, julienned for garnish
Macaroni Cheese Muffins

1. Preheat oven to 180C. Grease a muffin tin with cooking oil spray
- 210 g uncooked macaroni
- 15 g butter
- 1 egg, beaten
- 250 ml milk
- 175 g grated cheddar cheese, divided
- 175 g grated mozzarella cheese
- 60 g seasoned dry breadcrumbs
- 2 tsp olive oil
- 1/2 tsp salt
Tia's Dog Food for kidney problems

This dog food is a low protein diet, specifically designed for dogs in early to late stages of kidney disease
- 1/4 lb ground beef (not lean ground chuck)
- 2 cups cooked white rice without the salt
- 1 hard cooked egg, finely chopped
- 3 slices white bread, crumbled
- 1 tsp (5g) calcium carbonate
- Also add a balanced supplement (Pet Tinic) which fulfills the canine MDR for all vitamins and trace minerals
Tiramisu

This is the recipe from Gabriele Corcos of Extra Virgin
- 3 cups brewed coffee, cooled
- 2 (8 oz) containers mascarpone
- 5 eggs, separated
- 14 oz savoiardi cookies (firm ladyfingers)
- 4 oz sugar, plus 2 Tbsp or more for the coffee
- 2 shots rum or Italian Marsala, optional
- pinch salt
- 2 Tbsp unsweetened cocoa powder
- 1/4 cup shaved dark chocolate, to garnish
- Since you are working with raw eggs, it is imperative to find the best quality eggs possible. Test the eggs by putting them in a bowl of water. If they fall to the bottom they are fresh and safe, if they come afloat they are ready to be tossed.
