Seafood Stew - Fisherman's Style

1. Preheat broiler to high with oven rack 4 inches from the heat
- 6 (1 inch) ciabatta slices
- 1/4 cup extra virgin olive oil, plus more for brushing and drizzling
- 5 garlic cloves, divided
- 1 cup finely chopped onion
- 1/2 cup dry white wine
- 1 32oz jar tomato sauce
- 2 Tbsp white wine vinegar
- 1 lb mussels, scrubbed
- 12 littleneck clams, scrubbed
- 12 oz cod fillets, cut into 2-inch pieces
- 12 oz skin-on snapper fillets, cut into 2-inch pieces
- 10 oz raw large shrimp, peeled and deveined
- 2 tsp kosher salt
- 6 oz cleaned squid, bodies cut into 1/2-inch thick rings
- 3 Tbsp chopped parsley

- 2 lb. beef, for stew
- 1 head garlic
- 20 g (3/4 oz) whole peppercorns
- salt, to taste
- 1 bottle red wine, preferably Chianti

This is Alex's family recipe
- 2 tsp canola oil, plus more if needed
- 2 small yellow onions, minced (about 1 cup)
- 2 garlic cloves, minced
- kosher salt
- 1 lb. ground beef (preferably 8 oz ground sirloin and 8 oz ground chuck)
- 3/4 lb ground pork (preferably shoulder)
- 1 tsp hot paprika
- 1 tsp black pepper
- 1 cup plus 2 Tbsp plain dried bread crumbs, plus more if needed
- 2/3 catsup, plus more for brushing
- 1 cup sour cream
- 1 med bunch curly parsley, leaves chopped (1/4 cup)
- 1 med bunch fresh tarragon, leaves chopped (2 Tbsp)
- 3 large eggs, lightly beaten, plus another as needed
Balsamic Vinaigrette

Place all ingredients in a jar and shake until well mixed
- 1/2 cup extra virgin olive oil
- 1/3 cup balsamic vinegar (use quality balsamic)
- 1 clove garlic, finely minced
- 1 small squirt dijon mustard
- 1 Tbsp honey
- Salt, Pepper and Basil to taste

- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 cups shortening
- 3/4 tsp vanilla
- 1 large egg, beaten

- tablet of Mexican Chocolate, laced with cinnamon

- 1 lb medium carrots with green tops, scrubbed well, greens reserved for another use
- 3/4 tsp kosher salt
- 1/2 tsp pepper
- 1 tsp Urfa biber
- 1/4 cup pickled shallots
- 1/2 lime
- 1/2 cup lebneh
- For the pickled shallots, use 1 cup apple cider vinegar, 1 Tbsp kosher salt, 1 Tbsp sugar and 4 large shallots (about 1/2 lb), thinly sliced crosswise into rings
