Ingredients

  • Dressing:
  • 2 pounds brussels sprouts, shredded on a mandolin, box grater or food processor
  • 1 1/2 cups cranberries
  • 3 shallots, diced
  • 4 medium apples, cored, peeled and diced
  • 2 cups carrots, shredded on a mandolin, box grater or food processor, OR chopped fine
  • 20 juniper berries, crushed/ground
  • 1 cup EVOO
  • 9 Tbsp Apple Cider Vinegar
  • 2 Tbsp dijon mustard
  • 2 garlic cloves, crushed
  • 1/2 tsp salt
  • 2 Tbsp brown rice syrup (you can use agave or honey)

Preparation

Step 1

1. Shred the brussels sprouts, put in large bowl. Add the cranberries. Shred carrots and add to bowl. Core, peel and dice the apples, add to bowl. Dice the shallots and add to bowl. Crush or ground the juniper berries and add to bowl (the berries are optional, if you don't like them, don't use them.

2. Make the dressing. Place all ingredients in a separate bowl and whisk until emulsified. Pour onto the salad and toss well.
