Kibbeh Balls

This recipe comes from a very old cookbook, from the Lebanese Church Ladies' Guild, from Cleveland, OH
- Kibbeh:
- 1 lb lean ground lamb
- 1 lb lean ground beef
- 3 cups cracked wheat, (bulghur #1)
- 1 medium onion, grated
- 1/4 tsp allspice
- 1/4 tsp cinnamon
- 1/4 tsp either nutmeg, cloves or cumin
- Salt and Pepper to taste
- Stuffing:
- 1 lb ground lamb or beef, ground twice
- 2 medium onions, finely chopped
- 1/4 cup pine nuts, toasted
- 1/8 tsp cinnamon
- 2 tbsp butter
- salt, pepper and allspice to taste
Spinach Shakshuka

1. In a food processor, finely chop the tomatillos, spinach, 1 cup of cilantro and the jalapeño, Do Not Puree
- 1 lb tomatillos, husks removed, halved
- 4 oz Malabar spinach, or large leaf spinach, coarsely chopped
- 1 cup cilantro, plus sprigs for garnish
- 1 jalapeno, stemmed and cut into thirds
- 3 Tbsp extra virgin olive oil
- 1 small onion, minced
- 2 garlic cloves, minced
- 1/2 tsp each ground cumin, coriander, caraway and turmeric
- fine sea salt
- 4 large eggs
- 1/2 cup crumbled feta
Yellow Cake with Chocolate Frosting and Caramel Top

- CAKE:
- 2 cups all-purpose flour
- 2 1/4 tsp baking powder
- 3/4 tsp kosher salt
- 16 Tbsp (2 sticks) lightly salted butter, at room temperature, plus more for greasing pans
- 2 cups sugar
- 6 large eggs
- grated zest and juice of 1 lemon
- FROSTING:
- 14 oz bittersweet chocolate, roughly chopped, about 2 3/4 cups
- 1 1/4 cups sugar
- 1/2 tsp kosher salt
- 2 cups heavy cream
- 1 tsp vanilla extract
- 12 Tbsp (1 1/2 sticks) lightly salted butter, cut into thin slices
- CARAMEL TOP:
- 1 cup sugar
- 2 tsp light corn syrup
- flaky sea salt for garnish (Maldon)
Watermelon Granita

Puree all ingredients in a blender until smooth
- 4 cups (1 3/4 lb) cubed seedless watermelon (from a 4 lb melon)
- 1/2 cup sugar
- 1 Tbsp fresh lime juice
Sangria White

1. Pour wine into a large glass pitcher
- 1 bottle of dry white wine
- 2 kiwis, peeled and sliced
- 1 large pear, sliced very thin
- 1 cup seedless green grapes
- 2 Tbsp superfine sugar
- 2 Tbsp Calvados or Armagnac
- 3 Tbsp Cointreau
- 1 1/2 cups bottled sparkling water
- sprigs of mints or fresh flower (garnish)
Mexican Mocha

Mix all of the dry ingredients together and place in a large mug
- 6 oz strong coffee (2 shots espresso)
- 2 Tbsp powder sugar
- 1 Tbsp unsweetened cocoa powder
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- pinch of cayenne pepper
- 1-3 Tbsp half n half or heavy cream
- You can make a large batch to have on hand with: 1 cup powdered sugar, 1/2 cup cocoa powder, 2 tsp cinnamon
- 2 tsp nutmeg
- 1/8 tsp cayenne pepper
- USE 3 TBSP PER CUP
Upside Down Pineapple Cupcakes

This recipe will fill all 6 cakes in a large muffin/cupcake tin
- Topping:
- 2 eggs
- 2/3 cup sugar
- 4 Tbsp pineapple juice
- 2/3 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup butter, 1/2 stick
- 2/3 cup brown sugar, packed
- 1 can pineapple rings
- 6 marachino cherries (double if you are trying 12 cupcake tin)
Mojito-Watermelon Pops

These are boozy ice pops that layer a minty mojito with vodka-spiked watermelon juice
- Mojito Layer:
- 5 oz Simple Syrup (SEE BELOW IN DIRECTIONS)
- 4 oz water
- 2 1/4 oz light run
- 2 oz fresh lime juice
- 3 Tbsp packed mint leaves
- 1/4 oz lime cordial
- 1/4 tsp xanthan gum (Bob's Red Mill sells this, amazon sells, or higher end/specialty mkts)
- Watermelon Layer:
- 10 oz watermelon juice
- 2 oz light agave nectar
- 1 1/2 oz citron vodka
- 2 oz fresh lime juice
- 1/4 oz lime cordial
- pinch of kosher salt
- 1/4 tsp xanthan gum

- Cream Cheese Icing:
- 3/4 cup freshly pureed beets, either boiled or roasted, then pureed
- 1/3 cup oil, sunflower or vegetable, *coconut oil to keep it vegan
- 1 1/4 cup sugar
- 1 1/2 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1/4 tsp salt
- 1 1/2 Tbsp natural cocoa powder (not Dutch processed)
- 1 1/2 tsp baking powder
- 1 cup almond milk (or other milk alternative)
- 1/4 cup butter, softened, OR *Earth Balance, to keep it vegan
- 1 block cream cheese, softened (250g) - *use vegan cream cheese to keep it vegan
- 1 1/2 cups confectioner's sugar
