Lemon Ricotta Cupcakes with Fluffy Lemon Frosting

Makes 12 cupcakes
- FROSTING:
- one 8 oz pkg cream cheese, room temperature
- 6 Tbsp unsalted butter, room temperature
- 1 Tbsp lemon zest, plus more for garnish
- 1/3 cup honey
- 2 tsp vanilla extract
- 1/8 tsp kosher salt
- CUPCAKES;
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp kosher salt
- 2/3 cup honey
- 1/2 cup ricotta cheese, fresh
- 1/2 cup vegetable oil
- 2 Tbsp finely grated lemon zest
- 1 Tbsp vanilla extract
- 2 large eggs
- 1 large egg yolk
- 3/4 cup creme fraiche
Thai Chicken

Cook and serve over or with rice of your choice
- 1 cup coconut milk
- 2 tbsp brown sugar, firmly packed
- 1 tbsp Thai red curry paste
- 1 tsp lime juice
- 1/4 tsp salt
- 2 cups cooked chicken, shredded
- 1 pound mixed vegetables, asian style
- 1/2 cup peanuts, chopped, if desired
Arrabiata Sauce

1. Heat oil in large skillet or saucepan over medium heat
- 1 tsp olive oil
- 1 cup chopped onion
- 4 cloves garlic, minced
- 3/8 cup red wine, or red wine vinegar, or 1-2 tsp anchovy paste
- 1 tbsp white sugar
- 1 tbsp chopped fresh basil
- 1 tsp crushed red pepper flakes
- 2 tbsp tomato paste
- 1 tbsp lemon juice
- 1/2 tsp Italian Seasoning
- 1/4 tsp ground black pepper
- 2 (14.5 oz) cans peeled and diced tomatoes
- 2 tbsp chopped fresh parsley

- 1 egg
- 1/4 cup granulated sugar
- 1 Tbsp dijon mustard
- 2/3 cup red wine vinegar
- 1/2 tsp salt
- 3 Tbsp grated fresh yellow onion, plus any juice from the grating
- 2 cups corn oil
- 3 Tbsp poppy seeds

- 2 tsp unsalted butter
- 2 tsp extra-virgin olive oil
- 1 lb medium carrots with green tops, scrubbed well, greens reserved for another use
- 3/4 tsp kosher salt
- 1/2 tsp pepper
Chicken and Cashew Stir Fry

4 basic steps to stir fry: 1
- Veggies:
- 1 lb boneless, skinless chicken breast or thighs, cut into 1/4 inch thick bite sized slices
- 1 cup sugar snap peas, strings removed
- 1 cup red bell pepper, cubed
- 1/2 cup whole roasted cashews
- Aromatics:
- 2 Tbsp minced ginger ( use fresh ginger as ginger paste will make the oil splash everywhere)
- 1/4 tsp red pepper flakes
- Marinade:
- 1 Tbsp minced garlic
- 1 1/2 tsp cornstarch
- 1 tsp soy sauce
- 1 tsp rice wine or dry sherry
- 1/2 tsp salt
- Stir-Fry Sauce:
- 1/4 cup chicken broth
- 2 Tbsp rice wine or dry sherry
- 1 tsp soy sauce
- To Cook:
- 2 Tbsp peanut, canola, vegetable or grapes oil
- 1/4 tsp salt

- 1/2 onion
- 4 cloves garlic
- 1 bunch fresh basil (about 4 large leaves)
- 4 tbsp extra virgin olive oil

- 1 Tbsp caster sugar
- 3/4 cup milk
- 1 egg, lightly beaten
- 1/2 cup vegetable oil
- 1/2 cup drained sun-dried tomato strips in oil, chopped
- 2 Tbsp basil pesto
- 50 g sliced mild salami, chopped
- 1 Tbsp milk, extra
- 1 garlic clove, thinly sliced
