Red Wine Chocolate Cake

1. Make the cake: Preheat oven to 350 degrees F
- FOR THE CAKE:
- 1/2 cup unsalted butter (4oz) melted, plus more for greasing
- 1 1/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 cup Cabernet Sauvignon, room temperature
- 1 tsp vanilla extract
- FOR THE GANACHE:
- 1 (3oz) semisweet chocolate baking bar, finely chopped
- 2 Tbsp cold unsalted butter, diced
- 1 Tbsp light corn syrup
- 1/4 cup sifted powdered sugar
- 2 Tbsp Cabernet Sauvignon, warmed
- flaky sea salt
Lemon Chicken Kebabs

You can cook these on the grill or in the broiler
- 1/4 cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 3 garlic cloves, crushed
- 1/2 tsp coarsely cracked pepper
- 1 1/4 lb skinless, boneless chicken breasts, cut into bite size pieces
Adobo Chicken with Bacon and Bay Leaves

A very traditional Filipino dish that stews chicken in vinegar and soy sauce
- 3 oz thick-cut bacon, cut into 1/4 inch matchsticks
- 6 large chicken thighs (about 8 oz each)
- salt and fresh ground pepper
- 6 garlic cloves, minced
- 1 large shallot, thinly sliced
- 1/4 cup plus 2 Tbsp coconut vinegar or cider vinegar
- 3 cups low-sodium chicken broth
- 1 1/2 Tbsp fish sauce
- 1 1/2 Tbsp shiro shoyu (white soy sauce which can be found in Asian markets)
- 6 bay leaves
- pinch of cayenne
Beef Meatballs and sauce with Rigatoni

- SAUCE:
- 3 Tbsp extra virgin olive oil
- 2 medium yellow onions, halved and thinly sliced
- 5 garlic cloves, halved and thinly sliced
- kosher salt and white pepper
- 6 plum tomatoes (1-1 1/4 lbs), cored, halved and diced
- 1 tsp sugar
- 1 tsp dried oregano
- 1 (28oz) can whole peeled tomatoes, broken into smaller pieces, with their liquid
- MEATBALLS:
- 1 lb ground beef, 85% lean, preferably sirloin
- 1 tsp kosher salt, or more if needed
- 1/2 cup plain dried bread crumbs, plus more if needed
- 1/2 cup freshly grated parmesan
- 1/3 cup finely chopped curly parsley
- 1/8 tsp red pepper flakes, or more if needed
- 1 large egg, lightly beaten, plus an extra, if needed
- For the dish:
- 1/2 cup canola oil
- kosher salt
- 3/4 pound dried rigatoni pasta
- 1 1/2-2 cups grated parmesan, to taste

- 1 cup sugar
- 4 Tbsp unsalted butter, room temp
- 1/4 tsp salt
- 1 egg AND 1 egg white
- 1 tsp vanilla extract
- 1 1/4 cup flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 cup finely chopped candied orange peel (you can substitute dried oranges/mandarins),
- plus more for sprinkling
- 1/3 cup white chocolate chips
- confectioner's sugar
- 4 oz semisweet chocolate, finely chopped

- 1 Tbsp dijon mustard
- 1/4 cup sherry wine vinegar
- 1/4 tsp salt
- fresh ground black pepper, to taste
- 1 1/2 cups olive oil

- 3 cups whipping cream
- 8 egg yolks
- 1/3 cup granulated sugar
- 1-1 1/2 tsp vanilla extract (or vanilla bean paste)
- 1/2 cup packed brown sugar
Spicy Green Posole

1. Preheat the broiler and position a rack 4-6 inches from the heat
- 1 lb tomatillos, husked
- 2 med poblano chiles
- 2 jalapeños
- 2 Tbsp extra virgin olive oil
- 4 chicken thighs (1 lb)
- 1 small onion, diced
- 4 garlic cloves, minced
- 2 15oz cans hominy, drained and rinsed
- 5 cups chicken stock
- kosher salt and pepper
- sliced cabbage, radishes and scallions, cilantro, watercress, Mexican crema and lime wedges for serving
Ham and Mushroom Crepes

You will be setting the batter in the refrigerator for a minimum of 4 hours to overnight
- For the Batter:
- 2 eggs, beaten
- 1 cup milk
- 1 cup flour
- 1 Tbsp melted butter
- 1/8 tsp salt
- For the Filling:
- 1/4 cup butter
- 1/4 lb mushrooms
- juice of 1/2 a lemon
- 1 onion, chopped
- 2 Tbsp flour
- 1 cup milk
- 1/4 lb cooked ham, diced
- 2 Tbsp chopped parsley
- salt and pepper to taste
